GREEN TOMATO MOCK MINCEMEAT PIE

Green Tomato Mock Mincemeat Pie image

This recipe is 'The Holidays' for me. I remember the smell filling the house 60 years ago when my mom was cooking it. At the end of the tomato season, when the remaining tomatoes in the garden will not ripen, this is a great use for them. A note from my mother: I put a heaping teaspoon of tapioca on the bottom crust before I fill it. It will absorb some of the liquid.

GREEN TOMATO PIE

Green Tomato Pie image

This pie is a classic in the southern U.S. and is a spicy treat no matter where it's served!

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 1h55m

Yield 8

Number Of Ingredients 12

2 2/3 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 cup shortening
7 to 8 tablespoons cold water
1 1/3 cups sugar
1/4 cup plus 3 tablespoons Gold Medal™ all-purpose flour
1 1/4 teaspoons ground nutmeg or ground cinnamon
1 teaspoon salt
4 cups green tomato slices, cut into fourths
1 1/4 teaspoons grated lemon peel
1/4 cup lemon juice
1 tablespoon butter or margarine

Steps:

  • In medium bowl, mix 2 2/3 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide in half and shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 10-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
  • In large bowl, mix sugar, 1/4 cup plus 3 tablespoons flour, the nutmeg and 1 teaspoon salt. Add tomatoes, lemon peel and lemon juice; toss to coat. Turn into pastry-lined pie plate. Cut butter into small pieces; sprinkle over tomatoes. Trim overhanging edge of pastry 1/2 inch from rim of plate.
  • Roll other round of pastry. Fold into fourths and cut slits so steam can escape. Unfold top pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
  • Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through slits in crust, removing foil for last 15 minutes of baking. Serve warm.

Tips:

  • Selecting the Right Tomatoes: Choose firm, unripe green tomatoes that are free from blemishes and bruises. These tomatoes will provide the perfect tartness and acidity to balance the sweetness of the apples.
  • Preparing the Tomatoes: To remove the skin easily, score an "X" at the bottom of each tomato and blanch them in boiling water for about a minute. Immediately transfer them to an ice bath to stop the cooking process and make peeling a breeze.
  • Slicing the Tomatoes: For uniform slices, use a sharp knife or a mandoline to thinly slice the tomatoes. This will help them cook evenly and maintain their shape in the pie.
  • Choosing the Right Apples: Select firm, tart apples like Granny Smith or Honeycrisp. These varieties hold their shape well during baking and provide a nice contrast to the tangy tomatoes.
  • Mixing the Filling: Combine the sliced tomatoes, apples, sugar, flour, cinnamon, nutmeg, and salt in a large bowl. Toss them gently to ensure even distribution of the spices and flavors.
  • Preparing the Crust: Use a pre-made pie crust or make your own using your favorite recipe. For a flaky crust, use cold butter and work it quickly into the flour mixture. Chill the dough before rolling it out to prevent shrinkage.
  • Assembling the Pie: Place one pie crust in a pie plate and spoon the tomato-apple filling evenly over it. Dot with butter if desired for extra richness. Cover with the remaining pie crust and crimp the edges to seal. Brush the top crust with milk or cream for a golden brown finish.
  • Baking the Pie: Bake the pie in a preheated oven at 375°F (190°C) for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Allow the pie to cool slightly before slicing and serving.

Conclusion:

Indulge in the delightful fusion of flavors that green tomato pie with apples offers. With its unique combination of tart tomatoes, sweet apples, and warm spices, this pie is a testament to the versatility of these often-overlooked ingredients. Whether you're a seasoned baker or a novice in the kitchen, this recipe provides a straightforward guide to creating a pie that will impress your taste buds and leave you craving for more. Embrace the unique charm of green tomatoes and apples, and enjoy a slice of this remarkable pie, perfect for any occasion.
