Provided by Robert Irvine : Food Network

Categories     side-dish

Time 16m

Yield 6 servings

Number Of Ingredients 14

6 cups loosely packed mixed greens: iceberg and romaine lettuces, mesclun, and radicchio (washed and dried in a salad spinner or with paper towels)
2 large tomatoes, cut into wedges
2 cucumbers, peeled and cut into thin slices
2 carrots, peeled and sliced thin
1 to 2 shallots, diced
4 ounces feta cheese, cubed
1 lime
1 tablespoon fresh parsley
1 tablespoon fresh chives
1 tablespoon fresh dill
1 clove garlic, peeled and quartered
3/4 cup buttermilk
1 teaspoon xanthan gum
Salt and pepper

Steps:

  • For the Salad:
  • In a large bowl, toss greens, tomatoes, cucumbers, carrots and shallots with enough dressing to coat. Sprinkle cubed feta cheese on top.
  • Microwave lime for about 30 seconds to release essential oils, and set aside to cool.
  • For the Dressing:
  • Turn on the blender and while it's running, add 1at a time through the feed tube, the parsley, chives, dill, and garlic, and blend together until a smooth paste has formed. At this point the lime should be cool enough to squeeze. With the power still on, squeeze the lime juice through the blender feed-tube, and then very slowly add the buttermilk and xanthan gum until the mixture thickens and can coat the back of a spoon. Adjust the seasoning with salt and pepper. Set aside in refrigerator until needed. (When chilled, the dressing should resemble something like mayonnaise.)

Greens with Fried Oysters and Buttermilk Dressing image

This delicious oyster recipe is courtesy of chef Emeril Lagasse.

Provided by Martha Stewart

Categories     Seafood Recipes

Number Of Ingredients 12

1 large egg
3 tablespoons Pernod
1 teaspoon minced garlic
1 teaspoon Dijon mustard
1 teaspoon freshly squeezed lemon juice
Coarse salt and freshly ground black pepper
3/4 cup vegetable oil
1/4 cup buttermilk
1/4 cup chopped scallions
1/2 cup finely grated Parmesan, cheese plus more for serving
6 to 8 cups assorted greens, such as arugula, frisee, radicchio, watercress, or mustard
24 Fried Oysters

Steps:

  • Place egg, Pernod, if using, garlic, mustard, and lemon juice in the bowl of a food processor; season with salt and pepper. With the motor running, slowly add oil and process until an emulsion is formed. Add buttermilk, green onions, and 1/2 cup cheese; pulse to combine. Keep refrigerated until ready to use, up to 1 day.
  • Place greens in a large bowl; sprinkle with cheese and season with salt and pepper. Add enough dressing to just coat; toss to combine. Divide greens evenly between 4 plates; top with fried oysters. Sprinkle with cheese and drizzle with more dressing, if desired. Serve immediately.

Tips:

  • Choose fresh, tender greens: The best greens for this recipe are young, tender leaves with a mild flavor. Some good options include baby spinach, arugula, butter lettuce, and romaine lettuce.
  • Wash the greens thoroughly: Be sure to wash the greens thoroughly to remove any dirt or debris. You can use a salad spinner to dry the greens quickly and easily.
  • Make the buttermilk dressing ahead of time: The buttermilk dressing can be made up to 2 days in advance. This makes it a great option for a quick and easy weeknight meal.
  • Don't overdress the greens: A little bit of buttermilk dressing goes a long way. Be sure to toss the greens lightly with the dressing so that they are evenly coated.
  • Add additional toppings: Feel free to add additional toppings to your salad, such as crumbled bacon, chopped nuts, or grated cheese.
