2 pounds chicken drumsticks
2 tablespoons steak seasoning, (divided)
1 tablespoon cumin
2 ounces orange juice
12 ounces light beer or lager
juice of one lime
Olive oil
Cracked black pepper

Steps:

  • Season the chicken drumsticks with one tablespoon of steak seasoning, and cumin powder. Place in a deep bowl and add orange juice and beer. Marinate for at least 30 minutes or up to 24 hours.
  • Remove chicken drumsticks from marinade and preheat grill to 500ºF.
  • Drizzle chicken with olive oil and season with remaining tablespoon of steak seasoning and cracked pepper. Squeeze juice of one lime over top.
  • Place chicken drumsticks on grill skin side down for 5 minutes. Turn heat down to 400ºF and then cook drumsticks for an additional 20 minutes turning every 5 minutes until golden brown.

4 pounds chicken drumsticks
12 ounces Dunkel-style "dark" lager (such as Modelo Negra)
3 Tablespoons Brazilian Sofrito, or 6 garlic cloves, minced
1 Tablespoon paprika
1 cup barbecue sauce
1 Tablespoons brown sugar
1/2 cup olive oil
sal grosso style rock salt for grilling

Steps:

  • In a large bowl, combine the garlic, the paprika, the barbecue sauce, the brown sugar, the olive oil and whisk to combine.
  • Next, add in the beer and whisk to combine.
  • Add in the chicken drumsticks and stir gently to make sure they're all submerged in the marinade.
  • Cover the bowl with kitchen wrap, and refrigerate for at least 4 hours, or preferably overnight.
  • About an hour before you intend to grill the drumsticks, remove the bowl from the fridge, and pour out the marinade and discard. Leave the drumsticks in the bowl.
  • Preheat your grill.
  • Immediately before grilling, add in the grilling salt to the chicken drumsticks and mix to combine with your hands or tongs.
  • Lay your chicken drumsticks on the grill so that they are evenly spaced and over direct heat. Cook, turning every 5 or so minutes, for about 30 minutes, or until they are charred to perfection and reach an internal temperature of 165F degrees on an instant read thermometer.

This chicken is fantastic! I have an indoor grill that I use in the winter season, and I make this chicken quite often....don't forget to marinade the chicken before grilling, as it won't have the same flavour. Note: prep time, does not include marinating the chicken.

1/3 cup butter, melted
1 1/2 cups lemon juice
1 can beer
1 teaspoon garlic salt or 2 -3 cloves minced fresh garlic
1 teaspoon lemon pepper

1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

¼ cup brown sugar
¼ cup kosher salt
¼ cup paprika
2 tablespoons ground black pepper
¼ teaspoon cayenne pepper
1 cup teriyaki marinade
¼ cup vegetable oil
10 chicken legs, rinsed and patted dry

Steps:

  • Stir the beer, brown sugar, kosher salt, paprika, black pepper, cayenne pepper, and teriyaki marinade together in a bowl.

2 cups water
1/4 cup kosher (coarse) salt
1/4 cup packed brown sugar
4 cans or bottles (12 oz each) beer or nonalcoholic beer, chilled
2 cut-up whole chickens (3 to 3 1/2 lb each)
1 tablespoon paprika
1 teaspoon table salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 cup vegetable oil

Steps:

  • In 6- to 8-quart noncorrosive (stainless steel, enamel-coated or plastic) container or stockpot, mix water, kosher salt and brown sugar, stirring until salt and sugar are dissolved. Stir in beer. Add chicken. Cover; refrigerate at least 8 hours but no longer than 24 hours.
  • Line 15x10-inch pan with sides with foil. Remove chicken from brine; rinse thoroughly under cool running water and pat dry with paper towels. Discard brine. Place chicken in pan. Refrigerate uncovered 1 hour to dry chicken skin. Meanwhile, in small bowl, mix all rub ingredients except oil; set aside.

  • Turn chicken over; cover grill and cook 20 to 30 minutes longer, turning occasionally, until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks).
