black pepper, freshly ground
1 cup crumbled cotija cheese, divided into ⅔ cup and ⅓ cup
½ cup mayonnaise

½ cup cilantro or parsley leaves, minced, plus more for garnish
2 tsp lime zest
1 tsp ancho chile powder

8 ears corn on the cob, unhusked
3 quarts cold water, or as needed to cover

  • Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate 1 hour to blend flavors.
