Steps:
- Put the nuts in the bowl of a food processor, saving a handful to serve. Add the garlic, then blitz until you have coarse crumbs. Add the red peppers and tomato purée and blitz again to a rough paste. Add the sourdough and a glug of the oil to loosen the mixture, then blitz once more until you have a slightly smoother paste. Pour the sauce into a mixing bowl and add the cayenne pepper, paprika and some seasoning. Pour in the rest of the olive oil, stirring to incorporate it. Add the vinegar, 1 tsp at a time, until the sauce has the right acidity - it should make you salivate!
- For the spring onions, brush them with olive oil, season with salt and griddle over a high heat, turning occasionally, until softening at the core and charred all over. Serve the spring onions with the sauce and a scattering of almonds.

GRILLED ROADSIDE CHICKEN WITH KNOB ONIONS
This is my favorite recipe form Rick Bayless' "Mexican Everyday" cookbook. This Mexican twist on a whole chicken is some of the best, juiciest, most flavorful chicken I've ever had!

Steps:
- In a small bowl, mix together all the marinade ingredients.
- Heat one side of a bass grill to medium. If you have a grill with charcoal, let it burn until the charcoal is covered with white ash and about medium hot.
- While the grill is heating remove the giblets (if there are any) from the cavity of the chicken. Flip the chicken onto its breast. using poultry shears, cut down both sides of the backbone from tail to neck; discard backbone (or sometimes I save to make homemade stock!).
- Open the bird onto your work surface, breast side up. Make sure that the legs returned inward. Using your fist or mallet, wallop the bird on the breast, hard enough to dislodge the bones and flatten out the breast. (Reserve a little to baste with while cooking.
- Smear both slides of the chicken with the marinade. Lay over indirect heat on the grill. Cook, basting from time to time with remaining marinade until the juices run clear when a thigh is pierced deeply with a fork. If cooking on a gas grill, it will take about 45 minutes, if only a charcoal grill more like 1 hour 15 minutes - 1 hour 30 minutes, depending on size of chicken.
- About 10 minutes before the chicken is ready, put the knob onions on the grill, turning frequently until softened and browned.

GRILLED SPRING ONIONS WITH ROMESCO SAUCE
Spring onions look similar to green onions, but are a bit larger and stronger tasting. This recipe was developed by Melissa Clark and appeared in the New York Times. Romesco sauce is commonly served in the Catalan region of Spain. It can also be served as a sauce for meat, fish or vegetables other than spring onions. It can also be served on bread. This recipe takes 30 minutes using a microwave, 1 hour otherwise. I would probably decrease the oil in this recipe considerably, and add more warm water to make it less thick.

Steps:
- Slice 4 garlic cloves in half crosswise and put them in a small, microwave-safe dish. Cover with 1/4 cup olive oil. Loosely cover dish with plastic wrap, cut a slit in top and cook in microwave on medium power for 1 minute, 20 seconds. Uncover and let cool. Alternately, saute garlic in oil until golden around edges, about 3 minutes.
- Place tomato cut-side down on a plate. Microwave on medium power for 4 minutes. Let cool, then pull off tomato skin; it should come right off. If not, cook for another 30 seconds to 1 minute. Alternatively, roast tomato halves in a 350-degree oven until wrinkled and tender, 20-30 minutes, then peel.
- Chop remaining 3 cloves garlic and put in a food processor along with nuts and biscotti. Grind to a powder, add sun-dried tomatoes and yolks, and process until tomatoes are ground. Add cooked tomato, cooked garlic with oil, plus vinegar, paprika, salt and cayenne, and process until smooth. Slowly drizzle in remaining 1/4 cup olive oil. Taste and adjust salt and vinegar if desired. If mixture is too thick, slowly drizzle in 1-3 tablespoons warm water. (You can make sauce up to 5 days ahead.).
- To prepare onions, preheat a grill or broiler. Brush onions with oil and place on a grilling rack or broiler pan. Grill or broil for about 5 minutes a side, until browned and softened. Serve with romesco sauce.

Tips:
- Choose the right onions. Small, firm onions with tight layers are best for this recipe. Look for onions that are about 2 inches in diameter.
- Trim the onions properly. Cut off the top and bottom of the onions, then peel off the papery skin. Be careful not to cut into the flesh of the onions.
- Parboil the onions. This step is essential for preventing the onions from becoming too hard and chewy. Parboil the onions in boiling water for 2-3 minutes, then drain them and rinse them with cold water.
- Use a good quality olive oil. The olive oil you use will make a big difference in the flavor of the final dish. Use a fruity, extra virgin olive oil for the best results.
- Grill the onions over medium-high heat. This will help to caramelize the onions and give them a slightly smoky flavor.
- Make the romesco sauce ahead of time. It's delicious when fresh but gets even better over time as the flavors meld together. Make it up to 3 days in advance and store it in a sealed container in the refrigerator.
- Garnish with fresh herbs. Fresh herbs like parsley, cilantro, or chives add a pop of color and flavor.
Conclusion:
Grilled knob onions with romesco sauce is a delicious and easy-to-make appetizer or side dish. The onions are tender and slightly smoky, and the romesco sauce is rich and flavorful. This dish is sure to be a hit at your next party or gathering.
