GRILLED SALMON WITH A CREAMY 'TARTAR' SAUCE

Grilled Salmon With a Creamy 'tartar' Sauce image

This is a delicious, easy summer salmon dish that gives you a lot of bang for your bucks. We liked it grilled, but you could also broil it in the oven, cook it in a non-stick skillet, or even nuke it! The creamy (faux) 'tartar' sauce is absolutely yummy and really complements the rich, flaky salmon. This dish is great either hot or cold.

Time 35m

Yield 4 servings

Number Of Ingredients 11

1 lemon, zested and juiced
1 orange, zested and juiced
1 cup chopped fresh parsley, plus more for serving
3 tablespoons chopped fresh dill, plus more for serving
1/2 teaspoon paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper
1/2 cup olive oil
2 pounds salmon fillets, cut into 1-inch chunks
2 cups arugula
1 cup Greek yogurt

Steps:

  • Set the oven to broil. Line a half-sheet pan (13-by-18 inches) with foil.
  • Combine the citrus zests, juices, parsley, dill, paprika, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl. While stirring, add the olive oil until combined; set aside.
  • Add the salmon to a separate bowl. Pour half of the sauce mixture over the salmon, tossing to completely coat it. Thread the salmon onto four 15-inch metal skewers. Sprinkle lightly with salt.
  • Add the salmon skewers to the sheet pan crosswise, allowing the skewers to hang off the edges and keeping the salmon from touching the pan.
  • Broil until the edges of the salmon become golden and it is cooked through (no need to turn), 7 to 8 minutes. Transfer to a bed of arugula.
  • While the salmon rests, spread the Greek yogurt in a shallow bowl. Top with the remaining sauce mixture.
  • Garnish the salmon with more parsley and dill. Serve with the Greek yogurt on the side.

Tips:

  • Choose the right salmon fillet: Look for a fillet that is firm to the touch and has a bright orange color. Avoid fillets that are slimy or have brown spots.
  • Season the salmon well: Salmon is a mild-flavored fish, so it is important to season it well before cooking. You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, and paprika.
  • Cook the salmon over medium heat: Cooking the salmon over medium heat will help to prevent it from drying out. If you cook the salmon over high heat, it is more likely to burn on the outside and be undercooked on the inside.
  • Use a fish spatula to flip the salmon: A fish spatula is a thin, flexible spatula that is designed to flip fish without breaking it. If you use a regular spatula, you are more likely to break the salmon fillet.
  • Serve the salmon with a creamy tartar sauce: Creamy tartar sauce is a classic accompaniment to grilled salmon. It is made with mayonnaise, sour cream, tartar sauce, lemon juice, and chopped dill.

Conclusion:

Grilled salmon with creamy tartar sauce is a delicious and healthy meal that is perfect for a weeknight dinner. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can grill the perfect salmon fillet every time.
