Time 1h5m

Yield 4 servings

Number Of Ingredients 8

1 1/2 teaspoons salt, plus more for seasoning water
2 large sweet potatoes, washed
2 tablespoons olive oil
3 tablespoons brown sugar
1 teaspoon cayenne pepper, plus more if desired
1 1/2 teaspoons freshly grated black pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Preheat a grill to medium-high heat and oil the grates.
  • In a large pot, add the sweet potatoes and cover with cold salted water. Bring them to a boil over medium heat. Lower the heat and simmer until you can pierce each potato with a paring knife and there is little to no resistance, approximately 25 to 30 minutes. Do not overcook.
  • Transfer the sweet potatoes to a large bowl of cold water to halt their cooking process. Once the potatoes are cool, drain well. Peel the potatoes and cut them lengthwise into thick wedges, about 6 wedges per potato. Put the potatoes into a large bowl and coat them with olive oil. Add the brown sugar, cayenne, salt, pepper, cinnamon and cloves and toss to evenly coat. Put the wedges on the preheated grill. Cook until they are heated through and caramelized, approximately 3 to 4 minutes per side. Serve them as they are, or with a side of mint and cumin aioli, if desired.

Salt
5 tablespoons olive oil
6 cloves garlic, finely chopped
2 teaspoons finely chopped fresh thyme leaves
1/4 teaspoon red chili flakes
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 15 minutes. Drain and let cool slightly.
  • Heat the grill to high.
  • While the potatoes are cooling, heat 2 tablespoons of the oil in a small saute pan on the grates of the grill. Add the garlic, thyme and chili flakes and cook until the garlic is just soft, about 45 seconds. Remove from the heat.

Grill until lightly golden brown and just cooked through, about 6 minutes. Remove to a platter and immediately toss with the garlic mixture and chopped parsley.

Tips:

  • Choose the right potatoes: For the best fries, select firm, sweet potatoes that are free of blemishes. Avoid potatoes that are soft or have sprouts.
  • Cut the potatoes evenly: Cut the potatoes into evenly sized fries so that they cook evenly. You can use a sharp knife or a mandoline slicer to get uniform cuts.
  • Soak the potatoes: Soaking the potatoes in cold water for 30 minutes helps to remove excess starch and prevents them from sticking together. Make sure to dry the potatoes thoroughly before grilling.
  • Use high heat: Grill the potatoes over high heat to get a nice crispy exterior. This will help to prevent them from becoming soggy.
  • Don't overcrowd the grill: Overcrowding the grill will prevent the potatoes from cooking evenly. Grill the potatoes in batches if necessary.
  • Flip the potatoes frequently: Flip the potatoes frequently so that they cook evenly on all sides.
  • Season the potatoes: Season the potatoes with salt, pepper, and other desired seasonings before grilling. You can also add a drizzle of olive oil to help them crisp up.
  • Serve immediately: Grilled sweet potato fries are best served immediately. They can be enjoyed on their own or with your favorite dipping sauce.
