GUACAMOLE DRESSING

Guacamole Dressing image

This is a great dressing to serve over a mixed green salad- perfect with Mexican food or BBQ! Originally from a September 1983 issue of Bon Apetit magazine in the R.S.V.P. Letters to the Editor section. The recipe was requested from The Warehouse restaurant in Marina del Rey, California.Sometimes I will add some chopped cilantro and finely diced jalapeno pepper to the dressing, especially if I'm serving this with Mexican food such as enchiladas.

Tips:

  • Choose ripe avocados: The riper the avocados, the creamier and more flavorful your dressing will be.
  • Use fresh lime juice: Fresh lime juice adds a bright, citrusy flavor to the dressing. Bottled lime juice can be used in a pinch, but it won't have the same flavor.
  • Don't over-process the dressing: The dressing should be smooth, but not too thick. If you over-process it, it will lose its creamy texture.
  • Taste the dressing and adjust the seasonings as needed: The dressing should be flavorful, but not too salty or sour. Adjust the amount of lime juice, salt, and pepper to taste.
  • Use the dressing right away or store it in the refrigerator for later use: The dressing can be stored in the refrigerator for up to 3 days.

Conclusion:

Guacamole salad dressing is a delicious and versatile dressing that can be used on a variety of salads. It's also a great way to use up leftover guacamole. With its creamy texture and zesty flavor, this dressing is sure to be a hit at your next party or potluck.
