Time 25m

Number Of Ingredients 4

2 large onions, peeled and sliced 1/4 to 1/2 inch thick (preferably vidalia onions)
1 pkg onion ring coating mix
12 oz guinness stout
1/2 c corn meal

Steps:

  • 1. Separate the onion slices into rings. Whisk 2 cups of the coating mix with the guinness stout until smooth. In another bowl, add the corn meal to the remainder of the coating mix and combine.
  • 2. Preheat canola oil in a deep fryer or deep kettle to 375 degrees F.
  • 3. Coat the onion rings in the batter a few at a time. Dust or roll in the dry coating mix and then drop into hot oil. Cook for 4 minutes; then turn out onto paper towels to drain. Salt lightly and serve with your favorite dipping sauce.

Tips:

  • Use a sharp knife to thinly slice the onions. This will help them cook evenly and become crispy.
  • Soak the onion rings in cold water for at least 30 minutes before frying. This will help to remove some of the bitterness from the onions.
  • Use a good quality Guinness beer. The flavor of the beer will come through in the batter, so it's important to use a beer that you enjoy drinking.
  • Be careful not to overcook the onion rings. They should be golden brown and crispy, but not burnt.
  • Serve the onion rings hot with your favorite dipping sauce.

Conclusion:

Guinness battered onion rings are a delicious and easy-to-make appetizer or side dish. They're perfect for parties or game days, and they're sure to be a hit with your friends and family. So next time you're looking for a tasty snack, give Guinness battered onion rings a try.
