I developed this recipe after visiting my ancestral homeland of Ireland. It's a great way to get Guinness into your bread! Serve warm with butter and honey.

1 cup regular rolled oats, plus additional
2 cups whole wheat flour
½ cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup melted butter
2 teaspoons vanilla extract
1 cup buttermilk
1 (12 fluid ounce) can or bottle Guinness® beer

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
  • Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
  • Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.

This recipe is from the Guinness Storehouse, St. James Gate, Dublin, Ireland This recipe calls for "Guinness Draught," please do NOT use Guinness Extra Stout or Guinness Foreign Extra Stout in this recipe. Do not use "instant oatmeal" "Old Fashioned" (or quick cooking) oatmeal works best.

600 g whole meal flour
150 g plain flour
75 g oatmeal
2 1/2 teaspoons bread baking soda
1 teaspoon salt
2 1/2 tablespoons brown sugar
40 g unsalted butter
480 ml whole milk (please use whole milk, not reduced fat or skim milk)
200 ml black treacle
1/2 pint Guinness draught (please do NOT use Extra Stout or Foreign Extra Stout in this recipe)

Steps:

  • In a large bowl, mix all the dry ingredients and the butter until the dough is the consistency of breadcrumbs.
  • Add the milk, black treacle, and Guinness Draught, mixing until you get a wet dough.
  • Place dough in a greased bread tin, and bake in a preheated (170C/338F) oven for 40-45 minutes.

  • Add Guinness and eggs; stir just until blended.
  • Pour into greased 9x5x3 loaf pan.

To make 1 loaf:
This is for 2 loaves: (save half for later!)
7 cups all-purpose flour
6 Tbsp. sugar
2 Tbsp. baking powder
3 tsp. salt
12 ounces Guiness Extra Stout
handful caraway seeds
1/4 c pecan pieces
1/4 c (1 stick) melted butter

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 375 degrees. Mix flour, sugar, baking powder and salt in a large bowl. Mix well. Place a fat 3 1/2 cups of this mix into a baggie or jar to save for another day. To the remaining fat 3 1/2 cups flour mixture, toss in the caraway seeds, pecan pieces and mix. Add the Guinness. Stir with a fork or sturdy spatula until combined. Turn the lumpy dough into a buttered loaf pan. Pour melted butter over top of loaf. Bake until golden brown, about 45-60 minutes. Transfer to a wire rack to cool.

2 cups whole wheat flour
1/2 cup light brown sugar, packed
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
3 eggs
1/8 cup molasses
12 ounces Guinness stout

Steps:

  • Preheat oven to 400°F
  • Mix together oats, whole-wheat flour, brown sugar, baking powder and salt.
  • In separate bowl, combine butter, eggs, molasses and Guinness.
  • Add the wet mixture to the dry mixture and mix until all ingredients are thoroughly moistened, forming a batter.
  • Pour the batter into a greased 8 1/2 X 4 1/2-inch loaf pan, and bake for 40 to 50 minutes or until a toothpick inserted into the center of the bread comes out clean.

3 c self rising flour (sifted twice) or regular all purpose flour (sifted twice) note: measure after sifting
3 tsp baking powder (omit if using self-rising flour)
1 tsp salt (omit if using self-rising flour)
1/4 c sugar
1 can(s) or bottle (14.9 ounce) of guinness draught (or other dark beer)
1/2 c melted, unsalted butter - divided (1/4 cup for the batter and 1/4 cupfor pouring over the top before baking)

Steps:

  • 1. Preheat oven to 375 degrees. Prepare a large loaf pan (or 2 smaller ones) by spraying lightly with oil (like Pam Spray or Baker's Joy)
  • 2. REMEMBER TO DOUBLE SIFT THE FLOUR - either the self-rising or AP flour. NOTE: measure after sifting
  • 3. Mix the dry ingredients, 1/4 cup melted butter, and beer together. Pour into a prepared loaf pan
  • 4. Pour the remaining 1/4 cup of melted butter over mixture; and then bake 1 hour.
  • 5. Remove to a wire rack and let cool for a few minutes. Turn the loaf out and slice at least 1" pieces. Serve warm, with or without spreading on softened butter or honey. Enjoy!

- Use fresh Guinness beer, as it will provide the best flavor. If you can't find Guinness, you can substitute another dark beer, such as Newcastle Brown Ale or Murphy's Irish Stout. - Don't overmix the batter.
