3 cups rice (cooked)
2 Tbs sesame oil
1 small white onion (chopped)
1 cup frozen peas and carrots (thawed)
2-3 Tablespoons soy sauce (more or less to taste)
3 eggs (lightly beaten)
2 Tbsp chopped green onions (optional)

Steps:

  • Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion, chopped ham, peas and carrots and fry until tender.
  • Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  • Add the rice to the veggie, ham and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

2 tablespoons vegetable oil
1 tablespoon minced garlic (from 3 cloves)
1 tablespoon minced fresh ginger (from a one-inch piece)
3 scallions, white and light green parts thinly sliced (1/4 cup) and dark greens thinly sliced for serving
1 cup chopped ham
1 cup trimmed and halved snow peas
3 cups cooked and cooled jasmine rice
2 large eggs, beaten
2 tablespoons reduced-sodium soy sauce

1 tablespoon butter
1 2/3 cups water
1 cup long grain rice
3 tablespoons oil, divided
2 large eggs
4 ounces cubed ham, cooked
1 small chopped onion
1 cup frozen green pea, thawed under running water
1 tablespoon soy sauce
1 tablespoon oriental sesame oil

Steps:

  • In med saucean bring butter and water to a boil over high heat.
  • Stir in rice.
  • Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
  • Stir the rice with a fork.
  • Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
  • In a large skillet heat 1 TBS oil over med high, coating the pan.
  • In a small bowl beat eggs.
  • Add the eggs to the skillet and fry until set, turning once.
  • Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
  • In the same skillet heat another TBS oil.
  • Add ham and cook until lightly browned.
  • Transfer ham to eggs and set aside.
  • In same skillet, add final TBS oil.
  • Add onion and stir fry for 1 minute.
  • Stir in peas, cover and cook til tender 2-3 minutes.
  • Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
  • Cook til heated through.
  • Serve immediately.

400 ml cooked long-grain rice (enough to fill a measuring jug up to 400ml level)
2 large eggs
2 tablespoons sesame oil
2 tablespoons ground nut oil
1 teaspoon salt
1/2 teaspoon black pepper
50 g bean sprouts
50 g water chestnuts
2 tablespoons chopped spring onions
50 g frozen peas (thawed and drained)
50 g chopped ham
2 tablespoons soy sauce

Steps:

  • Prepare your ingredients by slicing the water chestnuts, chopping the spring onions and ham. Then arrange your ingredients on a plate or in bowls ready. This makes it easier when coming to the actual stir frying section as you can just grab your ingredients.
