Categories     Main Dish Recipes     Pork     Ham     Whole

Time 2h50m

Yield 12

Number Of Ingredients 5

1 (8 pound) boneless ham
2 cups packed brown sugar
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage
1 cup grape juice
1 (20 ounce) can sliced pineapple, drained with juice reserved

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Use a knife to score a diagonal pattern onto the ham with the lines about 1 inch apart. Place the ham in a large roasting pan and pat brown sugar over the entire surface. Some will fall into the pan, that's okay.
  • Bake the ham in the preheated oven until the sugar is melting off of it, about 30 minutes. Remove the ham from the oven and pour the cola, grape juice and juice from the pineapple into the pan. Baste the ham with the mixture and return it to the oven.
  • Continue to bake in the preheated oven, basting every 20 minutes, for about 2 hours. Cut the pineapple rings in half. Remove the ham from the oven and float the pineapple rings in the drippings. Allow the ham to rest for about 10 minutes, then slice and serve with the pineapple and sauce.

HAM IN COLA

Ham in Cola image

Provided by Nigella Lawson : Food Network

Categories     main-dish

Time 2h50m

Yield 8 servings

Number Of Ingredients 7

1 (4 1/4 to 4 1/2-pound) bone in ham
1 onion, peeled, cut in 1/2
1 (2-liter) bottle cola (recommended: Coca-Cola)
1 handful cloves
1 heaping tablespoon molasses
2 teaspoons English mustard powder
2 tablespoons Demerara (raw cane sugar) or granulated brown sugar

Steps:

  • For the ham:
  • Peel and cut 1 onion in half. To a large pot or Dutch oven, place ham, the onion and pour over top, the 2 liter bottle of coca-cola. On a medium-high heat, allow to cola to come to a boil. Reduce heat to medium-low and cover, not tightly with lid, and allow to cook for 2 1/2 hours. It is 1 hour for every 2 pounds.
  • Preheat oven to 500 degrees F.
  • Pull the ham from the pot, and allow to rest on a cutting board reserving the cooking liquid. Using a sharp knife, trim the skin, leaving a thin layer of fat on the ham. Using the knife, score the fat diagonally into large diamond cut.. In each diamond pierce the fat with 1 clove. Spread the molasses over the meat. Gently pat the powdered mustard and sugar around the meat, so it sticks to the molasses. Line a roasting pan with aluminum foil. Gently place the ham in the roasting pan. Cook the ham for about 10 minutes or until glaze is burnished and bubbly.
  • For braising the ham in advance and then letting the ham cool, take ham from the refrigerator, glaze it according to the recipe, and give it 30 to 40 minutes to sit at room temperature. Place in a 350 degree F oven for 30 to 40 minutes, then turning up the heat if you think it needs a more crispy exterior.

HAM IN COCA COLA

Ham in Coca Cola image

Only those who have never tried this raise an eyebrow at the idea. Don't hesitate, don't be anxious: this really works. No one who cooks it, cooks it just once: it always earns a place in every repertoire. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Serves: 8

Number Of Ingredients 7

2 kilograms mild-cure gammon joint
1 onion (peeled and cut in half)
2 litres coca-cola
1 handful of cloves
1 heaped tablespoon black treacle
2 teaspoons English mustard powder
2 tablespoons demerara sugar

Steps:

  • I find now that mild-cure gammon doesn't need soaking, but if you know that you're dealing with a salty piece, then put it in a pan covered with cold water, bring to the boil, then tip into a colander in the sink and start from here; otherwise, put the gammon in a pan, skin-side down if it fits like that, add the onion, then pour over the Coke. Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2½ hours. If your joint is larger or smaller, work out timing by reckoning on an hour per kilo, remembering that it's going to get a quick blast in the oven later. But do take into account that if the gammon's been in the fridge right up to the moment you cook it, you will have to give it a good 15 minutes or so extra so that the interior is properly cooked. Meanwhile, preheat the oven to 240°C/gas mark 9/450ºF. When the ham's had its time (and ham it is, now it's cooked, though it's true Americans call it ham from its uncooked state) take it out of the pan and let cool a little for ease of handling. (Indeed, you can let it cool completely then finish off the cooking at some later stage if you want.) Then remove the skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the treacle over the bark-budded skin, taking care not to dislodge the cloves. Gently pat the mustard and sugar onto the sticky fat. Cook in a foil-lined roasting tin for approximately 10 minutes or until the glaze is burnished and bubbly. Should you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30-40 minutes, from room temperature, at 180°C/gas mark 4/350ºF, turning up the heat towards the end if you think it needs it.

Tips:

  • Choosing the right cola: Opt for a cola with a strong, bold flavor to complement the ham. Avoid diet or zero-calorie colas, as they may not provide enough flavor.
  • Slow and steady cooking: Cook the ham in the cola mixture over low heat to allow the flavors to meld and penetrate the meat. Rushing the process will result in a tough, dry ham.
  • Basting the ham: Baste the ham regularly with the cola mixture while it cooks. This helps keep the meat moist and prevents it from drying out.
  • Using a roasting pan with a lid: A roasting pan with a lid helps create a moist cooking environment, resulting in a more tender and flavorful ham.
  • Cooking time: The cooking time will vary depending on the size of the ham. As a general guideline, allow 20-25 minutes per pound of ham.
  • Internal temperature: Use a meat thermometer to ensure that the ham reaches an internal temperature of 140°F (60°C) for a medium-rare ham, 145°F (63°C) for a medium ham, or 150°F (66°C) for a well-done ham.

Conclusion:

Cooking ham in cola is a unique and flavorful way to prepare this classic dish. The cola adds a subtle sweetness and tanginess to the ham, resulting in a moist, tender, and delicious meal. Whether you choose to glaze the ham with a cola-based glaze or simply braise it in a cola mixture, you are sure to impress your family and friends with this mouthwatering dish. So next time you are looking for a new and exciting way to cook ham, give the cola method a try – you won't be disappointed!
