Spiced ginger-glazed ham image

Treat guests over for Christmas to a Boxing Day ham. You don't need a long shopping list - this easy, sweetly spiced version uses just five ingredients

Provided by Anna Glover

Categories     Dinner, Main course

Time 3h40m

Number Of Ingredients 5

2kg unsmoked boneless gammon joint
2 ½l ginger ale (not sugar-free)
2 tsp allspice berries , plus 1 tsp, crushed
300g light brown soft sugar
3 tbsp finely grated ginger

Steps:

  • Put the gammon in a large pan and cover with 2 litres of ginger ale. Top up with water to cover the joint, if you need to. Add the whole allspice berries and bring to a boil. Turn the heat down to low, and simmer gently, covered, for 2½ hrs. Top up with water, if you need to, while it's simmering.
  • Drain the ham and leave until it's cool enough to handle while you make the glaze. Put the remaining ginger ale in a pan with the sugar, grated ginger and crushed allspice. Simmer, uncovered, for 20-25 mins until syrupy.
  • Heat the oven to 190C/170C fan/gas 5. Remove the skin from the ham, leaving a layer of fat, then score the fat in a criss-cross pattern. Transfer the ham to a foil-lined roasting tin, and brush over half the glaze. Roast for 15 mins, then glaze with the remaining syrup. Increase the temperature to 200C/180C fan/gas 6 and roast for a further 15-20 mins until you get a sticky golden crust. Leave to cool for 15 mins before carving. Drizzle over more glaze from the tin to serve, if you like. Can be made ahead and chilled for up to four days.

Categories     main-dish

Time 3h40m

Yield 8 to 10 servings

Number Of Ingredients 8

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
1/2 cup Dijon mustard
1/2 cup whole grain mustard
1/4 cup honey
1/2 cup panko breadcrumbs
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh thyme leaves
2 tablespoons extra-virgin olive oil

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, mix the mustards and honey together in a small bowl. Mix together the breadcrumbs, parsley, thyme and olive oil together in another bowl.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush the mustard mixture all over the ham. Carefully pat the crumbs all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast until the breadcrumbs are golden brown, about 25 minutes more.

BAKED HAM WITH A CASHEW CRUST

Baked Ham With a Cashew Crust image

Want something more than just a glaze on your baked Christmas ham? Here 'tis! You can remove the rind from the ham and score the fat up to 1 week before, just recover with the rind or store in a ham bag (soaked in water & vinegar) in the coolest part of the fridge. You can also cook the ham 1-2 days early if you want to serve it cold, or even on Christmas morning if you can't fit your other meat and veggies in the oven at the same time. Time 1h25m

Yield 8 serving(s)

Number Of Ingredients 6

4 kg half leg ham
1/4 cup lime marmalade
2 tablespoons brown sugar
2 tablespoons Dijon mustard
1 egg yolk
200 g honey-roasted cashews, finely chopped

Steps:

  • Place oven shelf in lowest position of oven. Preheat oven to 160C (320F). Line a large roasting pan with baking paper.
  • Gently run your thumbs between the rind and fat of the ham to remove the rind. Leave the shank covered with rind and cut off the remainder (a zig-zag pattern looks nice). Score the fat in a diamond pattern with sharp knife, with cuts no more than 5mm deep. Place ham into prepared roasting pan.
  • Whisk marmalade, sugar, mustard and egg yolk in a bowl until smooth, and brush liberally over surface of ham.
  • Add nuts to remaining marmalade mixture and stir to coat. Spoon nut mixture onto upper side of ham and press on firmly.
  • Cook ham for 1 hour. To brown evenly, rotate ham every 15 minutes. Cover loosely with foil and let ham rest for 10 minutes before slicing.
  • To carve ham so everyone gets some crust: near the shank, make a vertical cut down to the bone. Then make another cut, starting 1-2cm (.5-1 inch) away and angling back to the first cut and remove the resulting wedge of ham. Now make several thin parallel slices down to the bone, then cut along the bone underneath the slices to remove.

Tips:

  • Choose the right ham: Select a bone-in ham for the best flavor and texture. A shank or butt ham are good options.
  • Make the glaze ahead of time: The glaze can be made up to 3 days in advance. This allows the flavors to meld and develop.
  • Score the ham: Scoring the ham allows the glaze to penetrate the meat and helps to create a crispy crust.
  • Baste the ham regularly: Basting the ham helps to keep it moist and flavorful. Use a pastry brush to apply the glaze every 15-20 minutes.
  • Cook the ham to the proper internal temperature: The ham is done when it reaches an internal temperature of 140 degrees Fahrenheit for a medium-rare ham, 145 degrees Fahrenheit for a medium ham, or 150 degrees Fahrenheit for a well-done ham.
  • Let the ham rest before carving: Let the ham rest for at least 15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful ham.

Conclusion:

Ham with Ginger Crust is a delicious and easy-to-make dish that is perfect for any special occasion. The combination of the sweet and savory glaze and the crispy ginger crust creates a flavor that is sure to please everyone at the table. With just a few simple ingredients and a little bit of time, you can create a ham that will be the star of your next meal.
