1-1/2 pounds lean ground beef (90% lean)
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) beef broth
1 cup water
4 celery ribs, thinly sliced
4 large carrots, halved and thinly sliced
1/2 cup quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup minced fresh parsley

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

I make it a lot in the winter months when we have a lot of snow--it warms you up. You may use rice in place of the barley, or a little of both.

1 lb hamburger
5 cups water
1 (16 ounce) can tomatoes, cut up (I use petite cut)
1 onion, chopped (1 cup)
2 medium carrots, sliced (1 cup)
1/3 cup barley, rinsed
1/4 cup catsup
6 beef bouillon cubes
2 teaspoons Lawry's Seasoned Salt
1 teaspoon basil
1 dash ground pepper

Steps:

  • Brown hamburg in large pan breaking up into medium pieces.
  • Drain off excess fat.
  • Add the rest of the ingredients.
  • Bring to a boil; reduce heat and simmer covered for 1 hour or till veggies are tender.
  • If you have any leftover rice, peas, or corn, add them at the end and heat well.
  • This soup freezes well as long as there is no potato in it.

2 1/2 pounds ground chuck
3 cloves garlic, minced
2 stalks celery, diced
1 large onion, diced
3 cups beef stock or broth, plus more if needed
One 14.5-ounce can whole tomatoes
3 tablespoons tomato paste
2 teaspoons dried parsley flakes
1/2 teaspoon ground oregano
1/2 teaspoon kosher salt, or more to taste
1/2 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon cayenne pepper, or more to taste
5 red potatoes, cut into chunks
4 carrots, peeled and sliced on the diagonal
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
Crusty bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  • Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
  • Serve with crusty bread!

1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
6 cubes beef bouillon
5 cups water
1 (8 ounce) can tomato sauce
1 (16 ounce) can diced tomatoes
1 teaspoon salt
1 (10 ounce) package frozen corn kernels
1 teaspoon dried basil
3 tablespoons ketchup

Steps:

  • In a medium skillet, brown hamburger over medium heat. Drain off fat.
  • Combine beef, carrots, celery, onions, bouillon, water, tomato sauce, chopped tomatoes, salt, corn, basil, and ketchup in a large stock pot. Bring to a boil. Reduce heat, and simmer for at least 1 1/2 hours.

This is my favourite recipe from the original Best of Bridge cookbook. I thought it was already posted here at Zaar, but since I can't find it I want to make sure it's included; I've only modified it slightly from the original. It's so easy to make and tastes so great!

1 1/2 lbs lean ground beef
1 medium onion, peeled and chopped fine
1 garlic clove, minced fine (my addition, original recipe uses no garlic)
1 (28 ounce) can plum tomatoes, undrained
4 cups low sodium beef broth
1 (10 ounce) can tomato soup
3 carrots, peeled and chopped fine
4 celery ribs, leaves removed and chopped fine (add celery leaves to soup if you wish, I often do)
2 bay leaves
1 teaspoon dried thyme (original recipe used less, but I love thyme)
1 teaspoon fresh ground black pepper (even more is better)
1/3 cup barley (pearl barley or pot barley, both work fine)
salt, to taste

Steps:

  • In a large dutch oven, brown meat, adding onions and garlic. When meat has lost its pink colour, drain off any excess fat if there is any visible.
  • Add all remaining ingredients, turn heat down to low so soup is barely simmering, cover, and let cook for about 2 hours (even longer is fine). After one hour, taste soup and add salt if necessary.
  • If you have leftovers (soup freezes well, so consider making the whole pot even if it's a lot for your family), be aware that it tends to thicken when cool. When reheating, I always add a little more beef broth.
