20 ounces frozen hash browns (thawed (about 6 cups))
½ cup white cheddar (shredded (sharp))
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
Unsalted butter (for greasing)
4 slices bacon
1 cup white cheddar cheese (shredded)
6 large eggs
½ cup half-and-half
Salt
Pepper
¼ cup green onion (chopped)

Steps:

  • Use your hands to squeeze the thawed potatoes to remove as much liquid as possible. Place in a medium mixing bowl. Add the cheddar, salt and pepper and toss to combine.
  • Grease a 9-inch springform pan with butter and evenly press the hash browns mixture into the bottom and sides of the pan, filling in all the gaps to prevent leakage.
  • Transfer the pan to the freezer for at least 1 hour or until the crust is firm.
  • Preheat the oven to 425°F. Transfer the frozen crust to the center rack of the oven and par-bake for 17 minutes. Remove from the oven and set aside.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Press hash brown potatoes between paper towels to remove excess moisture. Transfer potatoes to an 8-inch pie dish and press into the bottom and up the sides of the dish to form a crust. Drizzle with melted butter.

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.

20 ounces frozen hash browns, thawed
½ cup shredded white cheddar
½ teaspoon salt
¼ teaspoon cracked black pepper
2 tablespoons unsalted butter
3 shallots, each sliced into thin wedges
½ pound asparagus, cut into 1 inch pieces
6 large eggs, lightly beaten
⅔ cup heavy cream (or whole milk)
1 cup shredded white cheddar cheese
1 tablespoon minced thyme
salt and pepper to taste

Steps:

  • Squeeze as much liquid from the thawed hash browns as possible and place into a large mixing bowl. Add cheddar, salt and pepper and toss together.
  • Lightly grease a 9" spring form pan with cooking spray and evenly press the hash browns mixture into the bottom and sides of the pan, making sure there aren't any holes in the crust, which will cause leaking.
  • Place the crust in the freezer and freeze for 30 at least 30 minutes.
  • Preheat oven to 425˚F.
  • Place frozen crust until the oven and par-bake for 15 minutes. Remove from oven and slightly cool.
  • In a skillet melt butter over medium heat. Add shallots and lightly caramelize for about 10 minutes. Add asparagus to skillet and continue to caramelize for 5 minutes. Season with salt and pepper. Remove from heat and set aside.
  • In a large mixing bowl, combine eggs and cream. Whisk together until light and fluffy. Add remaining ingredients, including caramelized shallots and asparagus and stir together until completely combined. Season with salt and pepper.
  • Pour filling mixture into the par-baked crust and place into the oven.
  • Lower oven temperature to 375˚F and bake the quiche for 25 to 30 minutes or until the eggs have barely set.
  • Remove quiche from oven and score the perimeter with a paring knife. Loosen springform pan from sides of quiche and place quiche back into the oven for an additional 10 to 15 minutes. (this will help the crust get crisp on the sides.
  • Remove quiche from oven and cool for 10 minutes.
  • Slice quiches into wedges and serve.

3 to 4 russet potatoes, (peeled and grated)
1 teaspoon salt
1 teaspoon freshly cracked black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
6 large eggs
2 cloves garlic minced
1 1/2 cups heavy cream
3/4 cup fontina cheese, (freshly grated)
1/4 cup crumbled feta cheese, (plus extra for topping)
1/2 teaspoon cracked black pepper
1 pinch salt
1 pinch crushed red pepper flakes
¼ cup chopped fresh herbs, (such as parsley, oregano and basil)
½ cup chopped asparagus spears
12 asparagus spears, (woody ends removed)
chopped fresh herbs for topping

Steps:

  • Preheat the oven to 350 degrees F.
  • Grate the potatoes into a large bowl (I use a cheese grater!) and sprinkle with salt and pepper. Gather all the potato shreds up in a kitchen towel and squeeze out as much of the liquid that you can. Sort of like you would with cauliflower crust!
  • Heat a 10-inch cast iron skillet over medium heat. Add the oil and butter. Once it has melted, start pressing the potatoes in the skillet to form a crust. You want the layer to be even. I used a wooden spoon, metal measuring cup and spatula to continuously press the potatoes down and up the sides. You want to do this, pressing often, until the bottom and edges of the crust brown, about 10 to 12 minutes. Turn off the heat under the skillet.
  • Whisk together the eggs, garlic, cream, cheese, salt and peppers. Fold in the fresh herbs and chopped asparagus. Pour the filling into the crust. Place the long asparagus spears gently on top in a circle design with the top of the spear facing outward.
  • Bake the quiche for 35 to 45 minutes, or until golden on top and set in the center. Let the quiche cool before serving. Sprinkle with additional feta and herbs. To serve the quiche, use a sharp knife to cut down through the potato crust.
  • This is so good served warm or cold!
