I made up this ham and pineapple quesadilla recipe when I worked at a cafe and was craving Hawaiian-style pizza. We were serving Mexican food that day so I had to work with the ingredients on hand. I have made this repeatedly since. My favorite quesadilla. I like to mix sour cream and salsa in a small bowl and dip it.

- Heat a griddle over medium-high heat. Toast one side of a tortilla, 1 to 2 minutes. Lay 2 to 3 slices of ham on the other side of the griddle to heat through. Flip toasted tortilla over, sprinkle with mozzarella and Cheddar cheese blend, layer with hot ham, spread with desired amount of salsa, sprinkle with desired amount of pineapple, and fold tortilla in half.
- Turn quesadilla over and continue to cook until cheese is melted and tortilla has reached desired crispness, 2 to 4 minutes. Cut into wedges with a pizza cutter. Repeat with remaining ingredients. Serve with sour cream.

HAWAIIAN BBQ CHICKEN QUESADILLAS
I happen to love those BBQ chicken pizzas, especially with a little pineapple on top. So here's a lunch time creation when pizza dough or bread was not an option. Quick and so good! If I cook chicken for this I boil a chicken breast (can be frozen to begin with, just drop it in the water). After about 15-20 minutes just cut open the chicken to see if it is cooked all the way through and ready to use. If the chicken breast is defrosted it takes much less time, but time is estimated. I would encourage others to change this recipe up to create other pizza favorites making a pepperoni quesadilla, meat lovers, hawaiian, chicken alfredo, etc. Get creative! Pizza anyone?

- Start to heat up a skillet on the stove because this won't take long.
- Take flour tortilla and sprinkle half of it with cheese and 1/4 of cooked chicken.
- Add bacon bits and a little bit of crushed pineapple (no juice) if desired. Pour a little bit of BBQ sauce on top. Don't be too generous with the sauce or it will seep out of the quesadilla.
- Spray the pan with cooking spray. Fold the tortilla in half and place in pan. It only takes a few short minutes to brown one side and then flip over to brown the other side.

- 1. Salt and pepper chicken and cook on grill until done. While chicken cooks, carefully grill pineapple rings and then cut pineapple into smaller pieces. When chicken is done, cut into slightly smaller than bite size pieces or shred.
- 2. In a skillet with a tiny bit of oil, saute onion and jalapeno. When onion is almost cooked, add the roasted red pepper slices and a sprinkle of salt and pepper. Remove from heat and get ready to assemble the quesadillas!

Assemble between non-toasted sides the chicken, a drizzle of bbq sauce, grilled pineapple pieces, sauteed mixture, cheese, and another drizzle of bbq sauce. Return to the griddle or place in a warm oven just long enough to finish melting the cheese. Cut into wedges and serve!
