Season all sides of the chicken with 1 1/2 teaspoons salt. Flip the chicken and cook the other side until nicely browned, about 4 minutes more. Transfer the chicken to a plate and set aside.

- Cut between membranes with small sharp knife to release orange segments.
- Using flat mallet or rolling pin, pound chicken between 2 sheets of waxed paper to thickness of 1/2 inch.
