1 lb. fresh small broccoli florets
½ cup avocado oil mayonnaise ((or sour cream, or 1/4 cup of each))
1 teaspoon Dijon mustard
1 teaspoon Diamond Crystal kosher salt ((or 1/2 teaspoon fine sea salt))
1/4 teaspoon black pepper
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
1 cup grated cheddar (divided)

Steps:

  • Preheat oven to 400 degrees F. Spray a 2-quart baking dish with olive oil.
  • Place the broccoli florets in a large microwave-safe bowl. Add 2 tablespoons water. Cover and microwave on high until tender-crisp, about 3 minutes.
  • Meanwhile, in another large bowl, prepare the creamy sauce. Mix together the mayonnaise (or sour cream), Dijon mustard, kosher salt, black pepper, garlic powder, cayenne pepper and half of the grated cheddar cheese. Add a little water to thin out the mixture, about 1 tablespoon.

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.

1 Tbsp Milk
1/2 Cup Almond Flour
1/2 Cup Grated Parmesan Cheese
1/4 Cup Grated Cheddar Cheese
1/2 Tsp Garlic Powder
1/4 Tsp Salt

Steps:

  • In a bowl, whisk together the egg and milk and set aside. In another bowl, stir together the almond flour, parmesan cheese, garlic powder, and salt.
  • Preheat oven to 400 F and prepare a sheet pan with tin foil or parchment paper.
