My husband gave this 5 stars. Very delicious! You can brown the beef a day ahead and assemble the next morning. Sometimes I'll add extra ground beef, onions and minced garlic or add ground red pepper for some spice.

1 lb ground beef
1 onion, diced
1/2 teaspoon chopped garlic
1 ounce dry onion soup mix (1 envelope)
2/3 ounce Italian salad dressing mix (1 envelope)
1/4 teaspoon pepper
1/4 teaspoon season salt
14 ounces beef broth (1 can)
14 ounces chicken broth (1 can)
1 1/2 cups water
8 ounces diced tomatoes (undrained)
8 ounces tomato sauce
1 tablespoon soy sauce (preferably lite)
1 cup celery, slices
1 cup carrot, slices (thinly sliced)
4 tablespoons butter
1/4 cup flour
2 tablespoons flour
1/2 teaspoon italian seasoning
1/4 cup grated parmesan cheese (or shredded-which will blend better!)
shredded parmesan cheese
cooked macaroni

Steps:

  • Brown beef, onions and garlic. Drain, and add 1/4 cup of flour and mix.
  • To crock pot add: beef mix, onion soup mix, salad dressing mix, pepper, season salt, beef & chicken broth, water, tomatoes, tomato sauce, celery, carrots, italian seasoning, and soy sauce.
  • Cook for 8 hours.
  • Cook macaroni.
  • In saucepan make roux: melt butter on low and add 2 tablespoons of flour. Add to crock pot.
  • Add 1/4 cup parmesan to crock pot.
  • Serve over macaroni.
  • Serve and top with shredded parmesan.

1 ½ pounds ground beef
1 onion, minced
4 carrots, minced
3 celery ribs, thinly sliced
½ cup barley
1 (28 ounce) can diced tomatoes
2 cups water
3 (10 ounce) cans beef broth
1 (10.75 ounce) can condensed tomato soup
1 bay leaf
1 tablespoon parsley
1 teaspoon minced garlic
½ teaspoon dried thyme
ground black pepper, to taste

Steps:

  • Heat a large soup pot over medium-high heat, and crumble in the ground beef. Cook and stir until the beef is evenly browned and no longer pink. Drain, and discard any excess grease.
  • Stir in the onion, carrots, celery, and barley. Pour in diced tomatoes, water, broth, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper. Bring to a boil. Reduce heat, and cover; simmer for 2 hours, stirring frequently. Remove bay leaf before serving.

3 -4 potatoes, cut in large chunks- (I like to keep the peel on)
3 -4 carrots, sliced
1 onion, diced
2 stalks celery, diced
2 teaspoons minced garlic (to taste)
1 1/2 lbs lean ground beef
10 3/4 ounces low-sodium tomato soup
1 cup low-sodium V8 juice
1 -2 cup water, depending on how juicy you like your soup
salt and pepper
grated parmesan cheese

Steps:

  • Put all vegetables in crock pot.
  • Lightly brown ground beef and spoon over the vegetables.
  • Combine the tomato soup, V-8 juice and water. Add the seasonings, and pour over the vegetables and meat.

1 pound(s) ground chuck, cooked
1 large can of Veg-All large cut vegetables, drained, 29 oz.
2 can(s) vegetarian vegetable soup, 15 oz
1 can(s) petite diced tomatoes, undrained, 14.5 oz.
1/2 cup(s) diced frozen onions
1 cup(s) beef broth
2 - potatoes, peeled and cubed
1 teaspoon(s) garlic powder, or more
2 teaspoon(s) chili powder
1/2 teaspoon(s) pepper
1 tablespoon(s) Worcestershire sauce

Steps:

  • Brown beef (or ground turkey) with the onion, drain.
