This is my mother's lemon meringue pie recipe and it is one of my all time favorite desserts. You can add a bit more lemon zest if you want it to be more tart! Don't let pie cool before putting on meringue.

Number Of Ingredients 7

1 refrigerated pie crust
1 (14 ounce) can sweetened condensed milk
3 eggs, separated
½ cup lemon juice
2 teaspoons lemon zest
¼ teaspoon cream of tartar
½ cup white sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Press pie crust into a pie plate.
  • Mix sweetened condensed milk, egg yolks, lemon juice, and lemon zest together in a bowl; pour into pie crust.
  • Bake in the preheated oven for 25 minutes.

Time 40m

Yield 8

Number Of Ingredients 11

1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
¼ teaspoon salt
1 ½ cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  • To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  • Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Tips:

  • Choose the right lemons: Use fresh, organic lemons for the best flavor and color. Look for lemons that are heavy for their size and have a smooth, unblemished skin.
  • Zest the lemons finely: This will help release the maximum amount of flavor from the lemons. Use a Microplane grater or a fine-mesh zester.
  • Use a large enough pie plate: A 9-inch pie plate is the ideal size for this recipe. If you use a smaller pie plate, the filling will be too thick and the meringue will not be able to spread evenly.
  • Don't overbeat the egg whites: Overbeaten egg whites will make the meringue tough. Beat the egg whites until they reach stiff peaks, which means they should hold their shape when you lift the beaters out of the bowl.
  • Bake the meringue at a low temperature: This will help prevent the meringue from browning too much. Bake the meringue at 325 degrees Fahrenheit for 15-20 minutes, or until it is golden brown and set.

Conclusion:

This lemon meringue pie is the perfect dessert for any occasion. It is light, fluffy, and packed with lemon flavor. The meringue is perfectly browned and adds a touch of sweetness to the tart filling. Follow these tips to make the best lemon meringue pie you've ever tasted!
