1/4 cup sugar
1 tablespoon salt
1 tablespoon garlic salt
1 tablespoon steak seasoning
1 teaspoon black pepper
1 pork roast, any type (4 to 5 pounds)
2 pears, cored, peeled and sliced thick

Steps:

  • Combine pomegranate juice and sugar in small saucepan. Cook over low heat, stirring until sugar dissolves, about 2 minutes. Pour into 4 1/2-quart CROCK-POT® slow cooker. Blend salt, garlic salt, steak seasoning and pepper in small mixing bowl. Rub mixture over roast. Place roast in CROCK-POT® slow cooker. Turn roast to cover with juice mixture. Top roast with pear and orange slices. Cover; cook on HIGH 6 to 8 hours or until tender. Serve with juice and fruit slices. This is my Grandma's recipe that she gave me when I got married. Pork chops are baked then served with a rich mushroom sauce. It takes a little bit of work, but is great for a special dinner - my husband loves it!

1 tablespoon butter
1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
  • Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve.

These pork chops are absolutely delicious. There are many breaded pork chop recipes out there, but this one is better than most due to the spice rub that the pork chops sit in for several hours before getting dipped in the wet ingredients and the breadcrumb/Parmesan cheese mixture. Oh my goodness! Dinner heaven. Now, I like to serve these with ligonberry jelly or jam .....it goes fantastic with them. If you don't have that, don't let that put you off trying this recipe, it's great without it too. But I got hooked on the ligonberry stuff when another recipe for Swedish meatballs called for it (most recipes for Swedish meatballs do) .... and I discovered obtaining some was as easy as visiting your local IKEA store. They're similar to cranberries, but less tart, and you start to wonder how you lived without them, lol.

1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon garlic powder

1 egg
1/2 cup milk
1 1/4 cups dry breadcrumbs
1/2 cup parmesan cheese, grated

Steps:

  • 1) In a small bowl, combine the first seven ingredients; rub over both sides of pork chops. Cover; refrigerate 1-4 hours.
  • 2) In a shallow dish, beat egg and milk. In another shallow dish, combine breadcrumbs and Parmesan cheese. Dip pork into the egg mixture, then into the crumb mixture.
  • 3) Spray a broiler pan (with a rack) with cooking spray. Place pork chops on the rack. Bake at 375 degrees F for 30 minutes. Remove from oven, flip the chops over, and bake on second side for about another 30 minutes.

1 pork loin, small enough to fit into your crock pot
2 quarts chicken stock
4 tablespoons garlic, minced
1 large white onion
herbs (I recommend basil and oregano)
salt and pepper (and Mrs. Dash if you have it)

Steps:

  • Cut onion into eights or 1/4 rings.
  • Trim off excess fat.
  • Coat loin in a heavy layer of salt pepper and Mrs. Dash.
  • Braise loin in oven until all sides are well browned.
  • Let cool until you can lift it without burning yourself.
  • Place loin in Crock pot.
  • Deglaze pan with 1/2 of stock.
  • Pour liquid over loin.
  • Add garlic and herbs.
  • Use enough of the remaining stock to cover the meat.
  • Turn crock pot to high and leave undisturbed for at least five hours, the longer the better.
  • Remove and cool.
  • Set aside the stock for another recipe.
