2 dozen mussels, washed & beards removed
1/4 cup shallot, chopped
2 sprigs thyme
1 bay leaf
1/4 teaspoon salt (optional)
1 cup dry white wine

  • Properly clean the mussels by scrubbing them under cold running water and removing any barnacles or debris.
  • Use a Dutch oven or a large pot with a tight-fitting lid to cook the mussels. This will help to create steam and cook the mussels evenly.
  • Add a flavorful liquid to the pot, such as white wine, chicken broth, or a combination of both. This will help to steam the mussels and infuse them with flavor.
  • Use fresh herbs and lemon zest to enhance the flavor of the mussels. Common herbs used in mussel dishes include parsley, thyme, and basil.
  • Cook the mussels over medium-high heat until they open, which usually takes 5-7 minutes. Do not overcook them, as this will make them tough.
