HERBED CHEESE SPREAD
Tastes just like the expensive Boursin® cheese spread you buy at the store. Reduced-fat cream cheese works well in this recipe. Delicious spread on crackers or as a fill on celery sticks. Good shelf life in the refrigerator. This can be eaten right way, but it's best if refrigerated for at least one day before serving.

- Mix probiotic powder with water and stir. Add probiotic mixture to blender, add cashews. Blend at low speed and gradually increase speed and blend until smooth. Spoon mixture into a nut bag or cheesecloth. Squeeze and place in strainer and leave to ferment for up to 8 to 12 hours. Time required to ferment will differ depending on how warm it is. Do not ferment beyond 12 hours as it may become rancid. Once fermentation process is complete, spoon cheese from nut bag into bowl. Add remaining ingredients, stir well together. Place in mini 4.5 inch spring form pan. Press well and leave in fridge for at least 6-8 hrs to mold to the spring form and so flavours are more enhanced. Turn upside down, release from pan and sprinkle with dried herbs. Nut cheese is very dense with the nuts, so only use a little for portions. Cashew cheese is also delicious used when making wraps, spread some cashew cheese spread over the wrap or lettuce leaf, add vegetables and sprouts, perhaps a little salsa.

A simple and tasty soft cheese and herb spread. Serve with crusty bread. This cheese can be presented formed into a ball and rolled into toasted walnuts or almonds, or packed into a dish and drizzled with olive oil.

CASHEW HERB SPREAD
This is an original recipe for a versatile spread that is great on sandwiches or smeared on a lettuce leaf for a quick veg wrap; equally easy to use as a dip for crackers and veg or thin down a bit and use as a "cream" accompaniment for baked tofu, fish, etc. Toss with pasta or rice for a fresh, protein rich, dairy free cream sauce. Would also be nice to dress potatoes for a potato salad... hmmm... the possibilities are endless! My version comes out light green and looks a lot like guacamole, tastes fresh and herby and has a creamy mouth feel. The miso and nutritional yeast add a nutty/cheesy depth that you notice but can't quite put your finger on... and the garlic adds a raw zip that is really nice if you like that kind of thing! I love, love, love that this is something I can make that has no added fats or oils. Hope you love it too! (12 servings = 2 Tbsp per serving)
