Steps:
- In a small bowl, mix together the butter, parsley, chives, shallot and lemon zest.
- Lay the bread slices out on a clean work surface. Spread 2 teaspoons of the compound butter over each slice of bread. Trim the cucumber slices so that they are the length of the bread slices. (Save the scraps for salads.) Lay 4 pieces of cucumber across 1 slice of buttered bread--it is okay if the cucumbers overlap. Repeat on 5 more slices of bread. Season the top of the cucumbers lightly with salt. Next, add a single layer of radishes over the cucumbers, about 12 rounds per slice of bread.
- Toss the frisee with the lemon juice and a pinch of salt. Divide the frisee evenly over the radishes. Top the frisee with the remaining 6 slices buttered bread. Cut each sandwich into thirds with a serrated knife to make small rectangles. Serve immediately.

CHRISTA'S CUCUMBER BASIL TEA SANDWICHES
This recipe is from years of searching for the perfect English tea sandwich. I always looked forward to tea time in the Caribbean with my grandparents who were from English descent. My grandmother was French and my grandfather was from Guyana. My grandfather's parents were from England, so there is the British influence. You can add a teaspoon of dill to your spread.

QUICKIE CUCUMBER TEA SANDWICHES
One of my favorite tea sandwiches is Ms. Jenny Benedictine's cucumber spread. This is a little twist on that spread. It's got a bit more herbs in it that her original recipe. Great for an afternoon snack or a fancy tea-time tray. Passive time is chill time.

GRANDMA'S CUCUMBER TEA SANDWICHES
My Grandma and her sisters got together every couple of weeks to play bridge. She always made these sandwiches when it was her turn to host--and spent most of the day in the kitchen guarding the refrigerator to keep all the rest of us from stealing them! I changed the bread to whole wheat, as I like it better, but you can use whatever suits you--we also use pumpernickel or rye.

CUCUMBER SANDWICHES
Quintessentially English high tea sandwiches - just how Oscar Wilde's Lady Bracknell would have had them served. Cucumber sandwiches are one of England's most traditional tea sandwiches, thinly sliced cucumber on good buttered bread. The crusts are always removed. I found this recipe on an English website and have posted it for the 2005 Zaar World Tour. The ingredients and directions have made concessions to what is now available - such as seedless cucumbers. A delicious really low fat sandwich!

Steps:
- Peel the cucumber, cut in half lengthways, and slice crossways as thinly as possible.
- In a small bowl, combine the butter and orange zest and stir until the mixture is creamy and the ingredients are well-blended.
- Spread each slice of white bread with the butter mixture, arrange several slices of cucumber on each slice and top with the whole-wheat bread, and cut each sandwich into 4 triangles.
- To serve: Arrange the sandwiches on a platter, alternating white and brown sides of the sandwiches and garnish with mint sprigs and orange slices.
- On cucumbers: Of course traditionally the cucumber is peeled, but to modern tastes, many cucumbers available - such as Lebanese or continental, just those names alone would be enough to have Lady Bracknell turning in her grave! - really don't need peeling.

Tips:
- Choose the right bread: Thin, white bread is the classic choice for cucumber sandwiches, but you can also use other types of bread, such as whole wheat bread or rye bread.
- Use fresh, crisp cucumbers: The cucumbers should be firm and have a bright green color. Avoid cucumbers that are wilted or have blemishes.
- Peel the cucumbers thinly: This will help to prevent the sandwiches from becoming soggy.
- Use a light spread: Cream cheese or butter are both good choices for cucumber sandwiches. Avoid using too much spread, as this can overpower the flavor of the cucumbers.
- Add other ingredients: You can add other ingredients to your cucumber sandwiches, such as dill, chives, or thinly sliced radishes.
- Cut the sandwiches into small pieces: This will make them easier to eat.
- Serve the sandwiches immediately: Cucumber sandwiches are best served fresh. If you need to make them ahead of time, store them in the refrigerator for up to 2 hours.
Conclusion:
Cucumber sandwiches are a classic tea party treat. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect cucumber sandwiches that will impress your guests.
