This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!

1 (6 ounce) package cranberry Jell-O gelatin or 1 (6 ounce) package cherry gelatin
1 (16 ounce) can whole berry cranberry sauce
1 (6 ounce) package lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, undrained, divided
1 cup sour cream (8oz container)
1 (8 ounce) package cream cheese
2 cups boiling water, divided

Steps:

  • Dissolve red jello in 1 cup boiling water and stir in half the can of pineapple and all of the can of whole berry cranberry sauce.
  • Spread in bottom of 9x13 glass dish and chill until partially set.
  • Combine sour cream and cream cheese and spread over red jello layer.
  • In a separate bowl, dissolve green jello in 1 cup boiling water and stir in the remaining half can of pineapple; chill until partially set.
  • Spread over the top of the cream cheese layer.
  • Cover with plastic wrap and refrigerate overnight or several hours until completely set.

1 box strawberry jello (large box)
1 pkg cream cheese softened
1 can(s) crushed pineapple drained
1 c walnuts chopped course
15 minutes of love

Steps:

  • 1. In 8 x 11 pan dissolve jello in 2 cups of boiling water. Refrigerate until almost set
  • 2. While Jello is setting, soften cream cheese, chop nuts and drain pineapple. Mix together and let sit until jello is almost set
  • 3. Mix together with Jello and mix well. Smooth with spatula and cover with plastic wrap. Allow to sit in refrigerator 1 hr or more. I like to make this recipe the day before. Cut in squares and serve with serving spatula Enjoy!!!

1 large package (6 oz.) lemon jello
½ c. red hot candies
3 c. boiling water
2 c. unsweetened applesauce

Steps:

  • Dissolve candies in boiling water; add in Jello and stir. Chill in refrigerator until slightly gelled; add applesauce. Pour in mold (or bowl) and set for at least 12 hours. (Half of this recipe serves 12 people as a holiday side.)

Sugar Free Orange Jello (enough to make 4 cups)
2 cups hot water
2 cups cold liquid from fruit
20 oz. Can Crushed Pineapple
15 oz. Can Mandarin Oranges
8 oz. Fat Free Milk (for the Dream Whip)
2 envelopes Dream Whip (makes 4 cups)
1 bag Colored Mini Marshmallows
16 oz. Fat Free Small Curd Cottage Cheese

Steps:

  • First things first. Put your pineapple and oranges in the frig for at least 12 hours. Also, make your Dream Whip ahead of time and let it get cold. Open your Mandarin Oranges and cut each segment in half. Drain the juice from the oranges and pineapple thoroughly. If you do it right, you should get the 2 cups you need for the jello. Drain the liquid from your cottage cheese using a strainer. Heat up 2 cups water and pour it in a very large bowl. Stir in jello mix and then cold liquid from the fruit. Let it set in the frig about 2-3 hours. Remove from frig and mix in the other ingredients in this order. First the fruit. Then you add the mini marshmallows and Dream Whip. Let it set a little more. Then you add the cottage cheese. Mix well between each addition. Let it set overnight. Enjoy.
