Steps:
- Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
- Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
- In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
- Remove from heat and add rum.
- Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

Tips:
- Use fresh ingredients: Fresh fruits and spices will give your wassail the best flavor. If you can, use seasonal ingredients for the tastiest results.
- Simmer, don't boil: Wassail should be gently simmered, not boiled. Boiling will make the wassail harsh and bitter.
- Add alcohol sparingly: Wassail is traditionally made with alcohol, but you can adjust the amount to your liking. If you're serving wassail to children or people who don't drink alcohol, you can omit it altogether.
- Serve warm: Wassail is best served warm. You can reheat it over low heat on the stovetop or in the microwave.
- Garnish with a cinnamon stick or orange slice: This will give your wassail a festive touch.
Conclusion:
Wassail is a delicious and festive drink that can be enjoyed by people of all ages. It's easy to make and can be customized to your liking. So next time you're looking for a warm and comforting drink to enjoy, give wassail a try. Wassail is also a great way to use up leftover fruits and spices. If you have some apples or oranges that are starting to go bad, just add them to your wassail pot. You can also use spices that you already have on hand, such as cinnamon, nutmeg, and ginger.
