4 tablespoons butter
6 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 teaspoon garlic powder
3 cups milk
1 1/2 cups shredded cheese, of your choice (I use Monterey Jack)
1/2 cup shredded parmesan cheese or 1/2 cup romano cheese
4 tablespoons lemon juice

Steps:

  • Cook Rotini according to package directions.
  • In saucepan over medium/low heat melt butter; stir in flour, salt, pepper and garlic powder till smooth.
  • Slowly stir in milk; bring to a boil and stir till thickened.
  • Remove from heat and add both cheeses and lemon juice stirring until cheese is melted.
  • Combine cheese sauce with the Rotini.

1/2 pint heavy whipping cream
1 tomatoes, diced

1 onion, chopped
1 (8 ounce) package sliced fresh mushrooms
1 (10 ounce) package frozen green peas, thawed and drained
⅓ cup milk
1 (10.75 ounce) can condensed Cheddar cheese soup
2 cups shredded Cheddar cheese, divided
½ teaspoon salt
¼ teaspoon pepper

1 garlic clove, minced

4 oz. (1 cup) shredded mozzarella cheese
1 oz. (1/4 cup) crumbled blue cheese

  • Heat oven to 350°F. Spray 2-quart casserole with nonstick cooking spray. Cook rotini as directed on package. Drain.

1 teaspoon diced onion
