Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 lb mild Italian sausage, casings removed
1 medium onion, diced
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (15 1/2 ounce) can black beans, undrained
1 (15 ounce) can yellow hominy, drained
1 can condensed tomato soup
3 1/2 cups water
2 cups beef broth or 2 cups beef bouillon
1 cup of your favorite salsa (optional)
1 teaspoon dried parsley

Steps:

  • Brown sausage in a large Dutch oven or soup pot and drain fat.
  • Add diced onion and cook until tender.
  • Add everything else but the parsley and stir until blended.
  • Bring soup to a boil and then reduce heat to low and allow to simmer for about an hour.
  • Stir in the parsley and season to taste (taste it first, you may not need any additional seasoning).
  • Serve with sourdough breadsticks warm from the oven.

Tips:

  • Choose the right type of hominy: For this soup, canned hominy is a great option because it's already cooked and easy to use. If you prefer, you can also use dried hominy, but you'll need to soak it overnight before cooking.
  • Use a variety of sausages: This recipe calls for a combination of smoked sausage, kielbasa, and chorizo. Feel free to use your favorite types of sausage or whatever you have on hand.
  • Don't overcrowd the pot: When adding the hominy and sausages to the pot, make sure not to overcrowd it. If the pot is too full, the hominy and sausages won't cook evenly.
  • Simmer for flavor: The longer you simmer the soup, the more flavorful it will be. Simmer for at least 30 minutes, or up to an hour.
  • Serve with your favorite toppings: This soup is delicious served with a variety of toppings, such as sour cream, shredded cheese, diced avocado, or chopped cilantro.

Conclusion:

This hominy sausage soup is a hearty and flavorful dish that's perfect for a cold winter day. It's easy to make and can be tailored to your own preferences. So next time you're looking for a delicious and satisfying soup, give this recipe a try.
