Steps:

1/2 cup butter, cubed
2 cups chopped onion

1 teaspoon dried rosemary, crushed

  • Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. 2 teaspoons rubbed sage
2 teaspoons salt
1 pinch dried thyme
1 (16 pound) whole turkey, neck and giblets removed
¼ cup butter
⅓ cup orange juice
⅓ cup orange marmalade
1 ½ teaspoons honey
1 orange, peeled, sectioned, and cut into bite-size pieces

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Combine sage, salt, and thyme in a small bowl. Rub half of the sage mixture all over the turkey, then place the turkey in a large roasting pan. Set remaining sage mixture aside. Bring butter, orange juice, orange marmalade, honey, and orange sections to a boil in a saucepan over medium-high heat. 3 tablespoons packed lime zest (from about 12 limes)

1 teaspoon salt
2 tablespoons butter
4 1/2 cups chopped onions
pound turkey, neck, gizzard, and heart reserved
2 cups chopped peeled carrots
2 cups chopped celery & leaves

  • FOR GLAZE:.
  • Melt butter in heavy small saucepan over medium heat.

1 pound plum tomatoes, halved
5 large heads of garlic

1/4 cup (1/2 stick) unsalted butter, room temperature
2 tablespoons chili powder
2 tablespoons honey
1 14-pound turkey, wing tips cut off; neck, heart, gizzard and wing tips reserved for stock
1/2 cup fresh orange juice
5 1/2 cupsGiblet Stock
1/2 ounce unsweetened chocolate

  • Bring 3 1/2 cups water to boil in medium saucepan over high heat. Remove from heat. Add ancho chilies and let stand 1 hour. Drain, reserving 2/3 cup liquid.
