1/2 pound ground fully cooked ham
1/4 cup mayonnaise
2 hard-boiled large eggs, chopped
1/4 cup chopped pecans
1/4 cup crushed pineapple, drained
2 tablespoons honey
1 round loaf (1 pound) Italian bread
1 round Italian roll (6 inches)
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
1 tablespoon heavy whipping cream
8 to 10 drops yellow food coloring
1/4 cup butter, softened
1 can (6 ounces) pitted large ripe olives, drained
1 pimiento strip
1 celery rib, cut into thirds

Steps:

  • In a bowl, combine the ham, mayonnaise, eggs, pecans, pineapple and honey until blended. Slice the loaf and roll in half horizontally. Cut a third off one end of the loaf; slice the smaller portion in half. , In a bowl, beat cream cheese, cream and food coloring until light and fluffy. Spread over top of all bread sections and roll. 4 cups self-rising flour, plus more for dusting
1 teaspoon kosher salt
5 tablespoons salted butter, cubed and chilled
3 tablespoons shortening, chilled
1 1/2 cups buttermilk
10 tablespoons salted butter, melted
1/4 cup honey
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley
12 thick-cut slices ham steak, halved
12 slices Swiss cheese

Steps:

  • For the biscuits: Preheat the oven to 475 degrees F.
  • Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
  • Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
