⅛ teaspoon ground cinnamon
1 packet zero-calorie sweetener
1 pinch salt
¼ cup hot water
¼ cup cold water
⅓ cup rolled oats
½ banana, mashed

Steps:

  • Pour cocoa powder into a microwave-safe bowl and stir in cinnamon, sweetener, and salt. Add hot water and stir thoroughly until cocoa powder has dissolved. Stir in cold water until well combined. Stir in oats and banana until mixed well.
  • Microwave for 2 minutes. Remove, stir, and allow oatmeal to cool and thicken.

2 cups all-purpose flour
1 cup quick-cooking oats
1 tablespoon baking powder
3/4 teaspoon salt
1 cup unsalted butter, room temperature
1 cup sugar
1 cup packed golden brown sugar
2 large eggs
3 large mashed ripe bananas
2 teaspoons vanilla extract
1 (11 1/2 ounce) bag semi-sweet chocolate chips
1 cup pecans, toasted, chopped (optional)

Steps:

  • Preheat oven to 350°F Butter and flour 15x10x1-inch baking sheet. Blend first 4 ingredients in medium bowl. Beat butter in large bowl until fluffy. Add both sugars and beat until well blended. Add eggs 1 at a time, beating well after each addition. Beat in bananas, then vanilla. Stir in flour mixture, then chocolate and pecans.
  • Spread batter in prepared pan. Bake until tester inserted into center comes out clean and top is golden, about 45 minutes. Cool in pan on rack. Cut into 3x2-inch bars and serve.

1/4 cup sugar
1/4 cup unsalted butter, melted
2 large eggs
1/2 cup quick-cooking oatmeal
1 1/2 cups mashed bananas (3-4 very ripe bananas)
1/4 cup buttermilk
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease and flour a loaf pan.
  • Combine sugar and butter in a large bowl and stir until uniform. Add eggs one at a time, and stir to incorporate. Add oats, banana, buttermilk and vanilla; stir until uniform.
  • Combine flour, baking soda and salt in a small bowl; stir with a fork to blend. Add flour mixture to banana mixture one third at a time; stir until just combined. Stir in chocolate chips.
  • Pour batter into prepared pan. Bake for 1 hour and 10 minutes or until loaf is dark brown and a cake tester comes out clean.
  • Cool bread in pan for 10 minutes, and then run a knife along edges to loosen, turn out of baking pan and cool on a rack. Makes one loaf.
  • Tip: You can also make this into muffins-bake muffins for 20 minutes. You'll get about 12 muffins or 20 mini muffins.
