I love making these hot chocolate floats with rich, creamy hot chocolate made from scratch, but if you prefer, you can substitute 4 cups of prepared hot chocolate instead.

1 cup heavy cream
3 cups milk (I used whole milk)
2-3 tbsp brown sugar (to taste)
1 tsp vanilla extract
Pinch salt
6 oz good-quality bittersweet chocolate (finely chopped)
4 oz good-quality milk chocolate (finely chopped)
1 quart ice cream (vanilla, peppermint, and coffee all work well!)
Hot fudge sauce
Chocolate shavings or other decorations (optional)

Steps:

  • Whisk together the cream, milk, 2 tbsp brown sugar, vanilla, and salt in a medium saucepan. Place the pan over medium heat and cook it, whisking occasionally, until it starts to simmer. Remove the pan from the heat and whisk in the chopped chocolates, stirring until they're melted. Carefully taste the mixture and add more sugar, if desired.

3 1/4 cups water
1 teaspoon vanilla extract
1/4 cup fat free vanilla ice cream
ground cinnamon (to garnish)

5 1/2 cups nonfat dry milk powder
1 cup sugar
2 tablespoons sugar
3/4 cup unsweetened cocoa

Steps:

  • Place Hot Chocolate Mix and water in a 1 quart glass measure.
  • Add vanilla and stir.
  • Microwave, uncovered, at HIGH 3 minutes or until heated.
  • Pour 1 cup hot chocolate into each of 4 mugs.

1 cup white sugar
2 cups water
½ cup shortening
½ cup white sugar
1 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon salt
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place 1 cup of sugar and 2 cups water into a saucepan and bring to a boil.
  • In a medium bowl, cream together the shortening and 1/2 cup sugar until smooth. Combine the flour, cocoa, baking powder and salt; stir into the creamed mixture alternately with the milk so the batter does not become too stiff. Stir in vanilla.
