Yield 8 servings

Number Of Ingredients 11

3 ears of corn, husked
2 Tbsp. unsalted butter, melted
1 1/2 tsp. kosher salt, plus more
Freshly ground black pepper
3 Tbsp. fresh lime juice
2 Tbsp. honey
1 1/2 tsp. Sriracha
1 tsp. granulated garlic
1 1/2 avocados, cut into 3/4" pieces
1 serrano chile, thinly sliced
1/2 cup cilantro leaves with tender stems

Steps:

  • Prepare a grill for medium-high heat. Brush ears of corn with butter; season with salt and pepper. Grill, turning occasionally, until kernels are very tender and charred in spots, 10-12 minutes. Let cool slightly, then cut kernels from cobs.
  • Meanwhile, whisk lime juice, honey, Sriracha, granulated garlic, and 1 1/2 tsp. salt in a large bowl to combine. Add corn, avocados, chile, and cilantro to vinaigrette and toss to combine; season with salt and pepper. Cover with plastic wrap, pressing in direct contact with salad to prevent avocados from turning brown. Chill at least 2 hours.
  • Do Ahead
  • Salad can be made 1 day ahead. Keep chilled.

Tips:

  • Choose fresh, sweet corn: The fresher the corn, the better the salad will taste. Look for corn that has plump, full kernels and a bright yellow color.
  • Cook the corn properly: Overcooked corn will be tough and chewy. Undercooked corn will be starchy and bland. Cook the corn until it is tender but still has a slight crunch.
  • Use a variety of toppings: The best hot corn salad recipes use a variety of toppings to add flavor and texture. Some popular toppings include diced tomatoes, chopped red onion, crumbled bacon, and shredded cheese.
  • Dress the salad lightly: A heavy dressing will overwhelm the flavor of the corn. Use a light dressing, such as a vinaigrette or a simple olive oil and lemon juice dressing.
  • Serve the salad warm: Hot corn salad is best served warm, so make it just before you're ready to eat it.

Conclusion:

Hot corn salad is a delicious and versatile dish that can be enjoyed as a side dish, a main course, or a snack. It's a great way to use up fresh corn, and it's also a healthy and affordable meal. With so many variations to choose from, there's sure to be a hot corn salad recipe that everyone will love.
