½ onion, chopped
1 (4 ounce) can diced green chilies
¼ cup white vinegar
2 tablespoons brown sugar

1 (4 ounce) jar pimientos, drained
2 tablespoons minced parsley
2 tablespoons minced green onions
1/2 teaspoon grated lime rind
1 1/2 tablespoons lime juice
1 1/2 tablespoons sugar
1/4 teaspoon crushed red pepper flakes
1/2 papayas (can sub cantelope, if you must) or 1 ripe mango, pared, seeded, chopped (can sub cantelope, if you must)
48 Nabisco Triscuits (or other crackers)

Steps:

  • Pare and halve cucumber, remove seeds, discard, chop cucumber finely.
  • Mix cucumber with pimentos, chopped as necessary to make a finely textured salsa, the parsley, green onion, lime rind, lime juice, sugar and red pepper flakes.

2 medium onions
12 garlic cloves, peeled
3 teaspoons barbecue seasoning, divided
2 pounds tomatillos, husks removed (about 12)
2 pounds plum tomatoes (about 8)
6 jalapeno peppers
1-1/2 cups cider vinegar
1-1/4 cups packed brown sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup minced fresh cilantro

Steps:

  • Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack.
