Steps:
- Heat the oil to 350 degrees F. in a deep-fryer or Dutch oven.
- In a 1-quart mixing bowl, stir the cornmeal, flour, onion, jalapeno, corn, and eggs, until blended. Allow to stand 5 minutes.
- Drop the batter by teaspoonfuls into the hot oil. Don't overcrowd; leave room for the hushpuppies to be turned. Cook the hushpuppies until golden brown, about 3 minutes. Remove from the oil with a slotted spoon and drain on paper towels. Keep the cooked hushpuppies warm in an oven while cooking the remaining batter. Lightly sprinkle with salt and pepper, to taste, and transfer them to a serving dish. Serve with Paula Deen's Sweet and Spicy Chili Sauce, if desired.
MISSISSIPPI CATFISH AND HUSHPUPPIES
Steps:
- Hushpuppies: Mix first 6 ingredients in mixing bowl. Add buttermilk as needed until batter reaches a thick, mashed potato-like consistency. Refrigerate for 45 minutes to 1 hour before using. Heat peanut oil to 325 degrees F. Using 2 teaspoons to drop the batter, dip the first teaspoon into water and then fill with hushpuppy batter. Use the other teaspoon to rake the batter into the oil. Cook for approximately 4 minutes until golden brown. The hushpuppies should roll over in the oil by themselves. If they do not, you may have to turn them.
- For the Catfish: Put first 6 ingredients into a large brown paper bag. Roll down the top and shake until well-mixed. Cut catfish in half lengthwise. Pat dry with paper towel. Mix milk and hot sauce. Dip catfish in milk bath, put in paper bag with breading and shake until covered. Place catfish into pot with about 4 inches of peanut oil heated to about 325 to 350 degrees F. Cook until brown and firm, about 6 to 7 minutes.

Steps:
- Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
- When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

Steps:
- Preheat 2 inches peanut oil in a deep-fryer or Dutch oven to 375 degrees F. Whisk the cornmeal, flour, 1 teaspoon salt, the sugar, cayenne and paprika in a large bowl to get rid of the lumps. (No one likes a lumpy hushpuppy.) Mix in the remaining ingredients, stirring well to combine.
- Dip 2 spoons into a mug of water (this allows the batter to come clean off). Scoop up about 1 1/2 tablespoons of the batter and carefully slide it into the hot oil, working in batches. Fry the scoops of batter 3 to 5 minutes, or until golden brown and cooked all the way through (test the first one for doneness). Remove and drain on a paper towel-lined baking sheet, seasoning with salt as soon as they come out of the fryer.

LOBSTER HUSHPUPPIES WITH HORSERADISH CREAM
Steps:
- For the cream: In a small mixing bowl, add the sour cream, heavy cream, horseradish, chives, salt and 3 to 4 turns pepper. Whisk to combine, then cover and refrigerate.
- For the lobster: In a large pot, add 3 inches cold water, the white wine, crab boil seasoning, peppercorns, salt, garlic and lemons. Bring to a boil then drop in the lobster tails and poach until the shells turn bright red and the flesh is just cooked through, 7 to 8 minutes. Remove the tails from the cooking liquid and cool slightly before picking the meat from the shells.
- For the hushpuppies: Place half of the lobster meat and the buttermilk in the pitcher of a blender and puree until smooth. Roughly chop the remaining lobster meat and set aside. In a large mixing bowl, combine the cornmeal, flour, red peppers, baking powder, black pepper, jalapenos and 2 teaspoons salt. Stir in the scallions, eggs and the lobster-buttermilk mixture, and then fold in the chopped lobster tails. Mix until combined.
- In a large Dutch oven set over medium heat, add 2 to 3 inches of canola oil. Heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F.
- Working in batches, place heaping tablespoons of the batter into the hot oil. Use two spoons or a 2-tablespoon scoop to form the dumplings and drop into the oil. Fry the hushpuppies, turning occasionally, until golden brown and crispy, 3 to 4 minutes. Using a slotted spoon, remove the hushpuppies from the oil and place on a paper-towel-lined plate. Season with salt and squeeze lemon juice over the top.
- Serve the crispy hushpuppies with the chilled horseradish cream.

Steps:
- 1. Green Onion Soup: Remove onions from package, wash, cut off end roots and cut approximately 2" in length. Use the green and white parts of the onions.
- 2. Place in medium sized pot and cover with water. Add salt and pepper to taste. Add in about one tablespoon of bacon drippings (or oil if you rather).
- 3. Boil for an hour or so or until tender. To serve, dip onions with broth into a bowl and break up hushpuppies into the soup.
- 4. My Husband's Hushpuppies: In a small bowl mix in cornmeal, flour and salt. Add in enough beer to make it a tad bit soupy but not too soupy. Normally 1/2 to 2/3 can of beer is all you need. Do not overmix. Now drink the remaining beer.
- 5. Don't stir anymore. Just let it set for about 10 minutes undisturbed. ***NOTE***: You can use tap water rather than beer.
- 6. Heat shortening or oil. Stir a couple of times and then drop batter into hot grease by a tablespoon. Once they have fried for a few seconds, flip them over. Continue frying until golden brown.
Tips:
- Use cold water: Cold water helps the batter to stay light and airy, resulting in crispy hushpuppies.
- Don't overmix the batter: Overmixing the batter will make the hushpuppies tough. Mix just until the ingredients are combined.
- Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet will help the hushpuppies to cook evenly and prevent them from sticking.
- Fry the hushpuppies in hot oil: The oil should be hot enough to sizzle when you drop the hushpuppies in. This will help them to cook quickly and evenly.
- Don't overcrowd the skillet: Don't overcrowd the skillet with hushpuppies. This will prevent them from cooking evenly.
- Serve the hushpuppies hot: Hushpuppies are best served hot out of the skillet. You can serve them with your favorite dipping sauce, such as tartar sauce, ketchup, or ranch dressing.
Conclusion:
Hushpuppies are a delicious and easy-to-make Southern side dish. They are perfect for any occasion, from casual gatherings to formal dinners. With a few simple tips, you can make hushpuppies that are crispy on the outside and fluffy on the inside. So next time you're looking for a side dish that will impress your friends and family, try making some hushpuppies.
