Number Of Ingredients 4

1 package yeast in 1/2 cup warm water in bowel and set aside to prove yeast.
Put 1/2 cup Crisco, 1 cup boiling water, 1/2 cup sugar, and 1 T salt in large bowel and let dissolve.
After dissolved add 1 cup cold water, 2 eggs and yeast.
Add 8 cups flour stirring after each cup.

Steps:

  • Put damp light towel over dough and leave in fridge overnight. Make clover leaf rolls and place in greased muffin tin to rise for 4-5 hours

2/3 C shortening
2/3 C sugar
heaping Tbl. of salt
2/3 C mashed potatoes (approx.)
1/4 C warm water
1 & 3/4 C scalded milk (has skin on top)
1 egg
1 pkg. yeast
6 or 7 C flour (can be sifted or not)

Steps:

  • Combine shortening, sugar, and salt in a mixing bowl with the hot mashed potatoes. Scald milk and add. Cool to luke-warm. Dissolve yeast in 1/4 C water and add to mixture. Add egg and mix. Begin adding flour until dough is stiff (dough leaves the edges of the bowl. Cover with damp cloth and place somewhere warm to rise to double in size (I usually leave it overnight). Punch down and let it rise a 2nd time. Work dough down on floured cutting board. You can use right away or place in the refrigerator to use later. Roll out dough to about 1/2 inch in height. Cut rolls using a biscuit cutter or glass (2 1/4 in). If making cinnamon rolls, roll out dough into an oval, sprinkle with sugar, cinnamon, and melted butter. Starting at one end, roll dough up into a log. Cut rolls about 1/2 inch wide. Place rolls or cinnamon rolls into greased roll pans, and let rise. Bake rolls at 400 degrees for 10 to 15 minutes.
