Number Of Ingredients 3

4 bell peppers
8 ounces mozzarella cheese
1 tablespoon olive oil

Steps:

  • Put the oven on broil.

  • Brush with olive oil.
  • Top each slice with 1/2 ounce of mozzarella cheese.
  • Cook for 10-15 minutes or until cheese is browned and bubbly.

Tips:

- To easily roast the bell peppers, place them on a baking sheet and broil them in the oven for 10-15 minutes per side, or until the skins are charred and blistered. Once roasted, transfer the peppers to a bowl, cover them with plastic wrap, and let them steam for 15 minutes. This will make the skins easy to peel off. - Use a variety of bell peppers to add different colors and flavors to your pie. Red, yellow, and orange peppers are all good choices. - If you don't have feta cheese, you can use another type of soft, creamy cheese, such as mozzarella or goat cheese. - For a vegetarian version of this pie, omit the bacon. - Serve the pie warm or at room temperature. It is also delicious served cold.
