1 1/2 pounds ground chuck (20% fat)
4 1-inch cubes sharp white cheddar cheese, each halved
8 soft dinner rolls, split

Steps:

  • Divide meat into 8 equal pieces. Shape into balls. Press 1 cheese piece into center of 1 meatball and enclose cheese in meat. Flatten to 21/2- to 3-inch-diameter patty. Repeat to form 7 more patties. Sprinkle both sides of patties with salt and pepper.
  • Prepare barbecue (medium-high to high heat). Grill patties until cooked to desired doneness and cheese centers soften, about 5 minutes per side for medium. If desired, grill cut side of rolls until toasted, about 1 minute. Transfer patties to rolls; let rest 5 minutes.

1 lb ground beef, 95% lean
1/4 teaspoon sea salt
1/4 teaspoon pepper
1 ounce reduced-fat cheddar cheese, cut into 1/3-inch cubes
3 tablespoons whole grain mustard
1 tablespoon honey
8 small whole wheat dinner rolls
1/2 cup baby spinach leaves (packed)

Steps:

  • Place oven rack 6 to 7 inches from broiler and preheat to high. Cover a baking sheet or broiler pan with foil. In a large bowl, combine beef, salt and pepper. Divide meat into 8 equal balls, about 2 inches in diameter. Divide cheese into 8 equal portions.
  • With your thumb, make an indentation in 1 of the meatballs and insert a portion of cheese cubes. Push the edges of the meatball over the indentation to completely cover the cheese (this prevents the cheese from leaking out during cooking), then flatten the meatball into a 1/2-3/4-inch-thick patty; place on prepared baking sheet. Repeat with remaining meatballs and portions of cheese.
  • Broil until tops of patties are deeply browned, 6 to 7 minutes. Flip and broil until the second side is browned and patties are firm to the touch with no pink remaining in the center, about 5 more minutes (internal temperature should read 160° on an instant-read thermometer).
  • In a small bowl, stir together mustard and honey. To serve, split open each roll and spread on 1 tsp mustard mixture. Top with 1 patty and spinach leaves, dividing equally among all sliders.
  • OPTION: If you prefer to cook the sliders in a skillet rather than the broiler, mist the skillet with olive oil cooking spray and cook the burgers in 2 batches over medium heat for 5 to 6 minutes per side. By cooking in batches you eliminate overcrowding the pan, which would cause the patties to steam instead of developing a flavorful golden exterior.

2 large eggs, beaten
3/4 cup minced onion, divided
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
1 package (17 ounces) dinner rolls
1/2 cup Thousand Island salad dressing, divided
10 slices American cheese
12 sliced dill pickles
1-1/2 cups shredded Iceberg lettuce
1 tablespoon butter, melted
1 tablespoon sesame seeds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Bake until cheese has just melted, 2-3 minutes. Place meat on bottom halves of rolls; spread with remaining 1/4 cup dressing. Layer with pickles, remaining 1/4 cup minced onion and shredded lettuce; replace with top halves of rolls. Brush butter on top of rolls; sprinkle with sesame seeds. Serve immediately.
