INSTANT POT ALPHABET VEGETABLE SOUP

This soup is really simple to make. I use it as a side dish for sandwiches often times as we don't eat nearly as many French Fries or Potato Chips these days as we did in our younger years, lol! To make this a main dish, add leftover cooked meat to the pot or a half cup dry beans of choice.

Tips:

  • Prep your vegetables ahead of time: Cut and chop your vegetables before you start cooking to save time.
  • Use a variety of vegetables: The more colorful your soup, the more nutritious it will be. Try to include a mix of vegetables from different food groups, such as leafy greens, root vegetables, and cruciferous vegetables.
  • Don't overcook your vegetables: Vegetables should be tender-crisp, not mushy. Overcooked vegetables will lose their nutrients and flavor.
  • Add some healthy fats: A little bit of olive oil or avocado oil can help to enhance the flavor of your soup and make it more satisfying.
  • Season your soup to taste: Salt and pepper are essential, but you can also add other spices and herbs to taste. Some popular options include garlic, onion, thyme, and rosemary.
  • Serve your soup with a side of whole grain bread or crackers: This will help to make the soup more filling and satisfying.

Conclusion:

Alphabet vegetable soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to get your kids to eat their vegetables. With a few simple tips, you can make a delicious and nutritious alphabet vegetable soup that the whole family will love.
