ITALIAN BAKED CHICKEN AND PASTINA
This is one of Giada's recipes. It's a recipe meant to be kid pleasing so it's mild in flavor. My little ones love this, and so do I! You can spice this up any way you want to suit your family if they don't like things mild, as the recipe intended. I sometimes add hot chicken italian sausage. I also use 1/2 pound of pasta rather than the 1 cup stated.

Steps:
- Preheat oven 350°.
- In a 9x13-inch pan, place oil.
- Add potatoes rolling in oil to coat.
- Arrange chicken and sausage, rolling chicken to coat lightly.
- Pour the combined tomatoes and seasonings over all.
- Bake at 350° uncovered for 1 hour 15 minutes.
- Note: Stacking chicken on top of potatoes is fine.
Tips:
- Use high-quality ingredients for the best flavor. Look for organic or free-range chicken and sausage, and fresh vegetables.
- Don't crowd the chicken and sausage in the baking dish. They need space to cook evenly.
- Roast the chicken and sausage until it is cooked through, but not dry. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
- Add the pastina to the baking dish during the last 10 minutes of cooking. This will give it time to cook without getting mushy.
- Serve the baked chicken, sausage, and pastina with a simple green salad or roasted vegetables.
Conclusion:
This Italian baked chicken, sausage, and pastina is a delicious and easy one-pan meal. It's perfect for a weeknight dinner or a casual gathering. The chicken and sausage are roasted in a flavorful tomato sauce, and the pastina is cooked in the same pan. The result is a hearty and satisfying dish that everyone will love.
