Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 4h45m

Number Of Ingredients 14

1 whole chicken (4 1/2 pounds), cut into 8 pieces with the backbone, plus 8 extra wings (1 1/2 pounds)
4 large sprigs parsley
2 large sprigs thyme
1 bay leaf
1 tablespoon kosher salt, plus more for seasoning
1/2 teaspoon black peppercorns, plus freshly ground black pepper for seasoning
1 small onion, diced (1 cup)
2 carrots, peeled and cut into 1/4-inch rounds (1 cup)
1 cup chopped fennel
One 14.5-ounce can whole peeled tomatoes
8 ounces cooked ditalini
1/4 cup chopped fresh basil
1 tablespoon fresh lemon juice
Red-pepper flakes and grated Parmesan, for serving

Steps:

  • Fill a large pot with 14 cups water, chicken pieces, backbone, wings, parsley, thyme, bay leaf, salt, and peppercorns. Bring to a boil. Skim foam, reduce heat, and gently simmer for 25 minutes. Remove chicken (except wings); continue simmering while you discard skin and remove meat from bones. Cover meat and refrigerate; return bones to pot and simmer 3 1/2 hours more.
  • Strain broth through a fine-mesh sieve and discard solids, including bones and wings. Skim fat and transfer broth to a clean pot. Add onions, carrots, fennel, and tomatoes. Bring to a boil, reduce heat, and simmer until vegetables are very tender, 25 minutes.
  • Cut or tear reserved chicken into 3 cups of bite-size pieces. (You'll end up with an extra cup of meat; save it for a salad or a sandwich.) Add to broth, along with ditalini, basil, and lemon juice. Heat through, about 2 minutes. Season with salt and pepper, top with red-pepper flakes and Parmesan, and serve.

CREAMY WHITE WINE SAUCE AND ITALIAN CHICKEN OVER PASTA

Creamy White Wine Sauce and Italian Chicken over Pasta image

This is a super easy, ultra tasty recipe that calls for white wine, a packet of Italian dressing mix, chicken and pasta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta. I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. I also used 2 freshly chopped roma tomatoes, rather than the sundried.

Provided by Thumbs

Categories     One Dish Meal

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

4 -6 chicken breasts
1/3 cup butter
2/3 cup white wine (Sauvignon Blanc works especially well due to the herbaceous character)
10 ounces cream of mushroom soup
4 ounces cream cheese
2 garlic cloves, minced
2 finely chopped green onions
4 ounces dried Italian salad dressing mix
16 ounces pasta, linguine works very well
sun-dried tomatoes or 2 freshly chopped roma tomatoes
parmesan cheese

Steps:

  • Preheat oven to 325 degrees. Melt butter in large pot and stir in package of Italian salad dressing mix and garlic. Next stir in wine, mushroom soup and cream cheese until well-blended. Continue to heat (without boiling) mixture for about 5 minutes, sauce should be creamy and all cream cheese should be melted. Place chicken in single layer in baking dish and pour the above mixture over. Cover and cook for 50-55 minutes. Cook pasta about 15 minutes before chicken is done. Drain pasta and serve chicken and sauce over the linguine. Top with tomatoes, chives and parmesan cheese. Don't forget to save some of the white wine to complement dinner!

ITALIAN GRILLED CHICKEN & VEGETABLE PASTA

Italian Grilled Chicken & Vegetable Pasta image

By marinading and then grilling the chicken and the veggies, this dish has a wonderful grilled flavor served over pasta, its a filling meal. It is also great served cold. Make sure to not cut the veggies too thin so they dont slip thru the grill grates. I have also done this inside on the foreman type grill.

ITALIAN - CHEESY BACON / CHICKEN PASTA BAKE

Italian - Cheesy Bacon / Chicken Pasta Bake image

This is a recipe I threw together out of ingredients I wanted to use up in my pantry. If I must say so it was fantastic. The family loved it. Whats not to love with the use of bacon?...that is what set this dish off...I placed it on the top to bake, so as to stay crunchy. You may add it into the casserole if that's what you...

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your dish. Look for high-quality chicken, pasta, and vegetables.
  • Don't overcrowd the pan: When cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
  • Cook the pasta al dente: Pasta should be cooked al dente, which means it should be slightly firm to the bite. This will help it hold its shape and prevent it from becoming mushy.
  • Don't overcook the vegetables: Vegetables should be cooked until they are tender-crisp. Overcooking them will make them mushy and bland.
  • Use a flavorful sauce: The sauce is what will really make your dish shine. Choose a sauce that is flavorful and complements the other ingredients in the dish.
  • Serve immediately: Pasta is best served immediately after it is cooked. This will prevent it from becoming dry and gummy.

Conclusion:

Italian chicken pasta is a delicious and versatile dish that can be made with a variety of ingredients. By following these tips, you can make a flavorful and satisfying dish that your family and friends will love.
