- Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
- Cut each slice of prosciutto into 4 pieces, each about 1 1/2 inches by 3 inches. Cut the roasted red pepper into 16 strips, each about 1/2 inch by 2 inches.
- Unroll the dough on a cutting board. Spread the pesto on the dough in an even layer. Cut the dough along the perforated lines to create 8 triangles. Cut each triangle in half to create 16 long, thin triangles.
- Lay a mozzarella stick across the bottom of the wide end of one of the triangles. Lay 1 strip of red pepper crosswise next to the mozzarella, then lay 1 piece of prosciutto over most of the remaining pesto layer. Starting at the wide end, roll up the dough tightly around the filling and place seam-side down on one of the prepared baking sheets. Repeat with the remaining dough, prosciutto, red pepper and mozzarella sticks.
- Bake until the dough is golden brown and cooked through and the mozzarella sticks are heated through, about 20 minutes. Serve warm with marinara and more pesto for dipping.
CYNNA'S LASAGNA ROLL-UPS W/ ITALIAN SAUSAGE
There are a ton of these recipes out there, but mine includes delicious and spicy Italian sausage. Quick meal that the kids will love to help out with and of course, eat! Great with a bit of homemade garlic bread and a nice Caesar salad! Can be prepared up to 2 days ahead of time and stored in the fridge, just let it sit 30 mins at room temp. before baking.

- Preheat oven to 375°F.
- Cook noodles according to package directions.
- Drain and rinse in cold water.
- Mix ricotta, egg, parsley, and 1 cup mozzarella in a bowl, set aside.

- Preheat the oven to 350 degrees F. Lightly grease a 9 x 13 casserole dish. Bring a large pot of water to a boil. Add the salt and the lasagna and cook until al dente, as per package, cool off with cold water and drain. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and garlic and cook, stirring, until very soft, 6 to 7 minutes. Add the sausage and cook, stirring, until cooked and browned, drain well. Remove from heat and season with salt and pepper. Chill. In a large bowl, combine the sausage mixture, spinach, ricotta cheese, egg, parmesan cheese, mushrooms and 1 cup of the mozzarella cheese. Add the spinach mixture, basil, oregano. Stir to combine thoroughly. In the prepared dish, add the Tomato Basil sauce. Spread about 2 tablespoons of the spinach-ricotta filling onto each cooked lasagna noodle and roll up tightly. Place on a cutting board seam side down and slice in the middle so that the curled edges will face up. Place the filled noodles in the prepared dish. top with the remaining Mozzarella cheese. Bake at 350 uncovered for about 30 minutes till bubbly. Let rest for 10 minutes Can be made the day before.
