6 medium potatoes, peeled and sliced thin
1 large onion, sliced
1 red pepper, sliced

  • Preheat oven to 350.
  • Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.

1 frying chicken, skin removed cut into serving pieces
1 medium onion (about 4 oz)

1 (16 ounce) can diced tomatoes
3/4 teaspoon dried basil
1/4 teaspoon fennel seed
crushed red pepper flakes

  • Heat the oil in the pressure cooker.
  • Prick the skin of the sausages in several places with the tines of a fork.

Wonderfully refreshing recipe made with all fresh ingredients. Great any time of the year. My whole family loves this dish. I like to serve with fresh steamed brocolli, sprinkled with garlic powder or parmesan cheese.

6 cups cooked penne pasta
3 sweet Italian sausage links
1 lemon
2 garlic cloves, peeled
5 medium tomatoes
5 large fresh basil leaves
20 sprigs fresh cilantro
1 medium orange bell pepper
1 medium red bell pepper
1/4 cup basil pesto

Steps:

  • Remove casing from sausage links. Heat skillet, and add links. Break up meat while cooking (like ground beef consistancy) Cook until nicely browned.
  • Place on paper plate with paper towel to soak up extra grease. Place aside until needed.
  • Wash tomatoes and slice up into workable size. Place in food processor.
  • Peel garlic cloves and place in processor with tomatoes.
  • Cut lemon in half, squeeze juice from one half on top of tomatoes and garlic on food processor.
  • Wash basil and cilantro. Place herbs in food processor as well.
  • Process until all tomatoes are chopped up - NOT until smooth. You want a little chunkiness. Sauce will be a little watery. (I have thought about adding a small can of tomato paste or something here to thicken the sauce and make it more like what you would get out of a jar, however I have never tried it so I'm not sure how it would work/taste.).
  • Wash and cut up pepper. Cut into slices and then cut the slices in half.
  • Place tomato sauce in pan and add in meat. Heat for 5-10 minutes over medium heat until warm. Add in pepper for a few minutes and cook until desired firmness. (I only put them in for about 2-3 minutes as I like them just warm, and still crunchy.).
  • Mix sauce with warm pasta, stir in pesto and serve ENJOY!

13 1/2 ounces whole wheat macaroni
3 tablespoons olive oil
2 garlic cloves, minced
1 medium onion, chopped
2 green bell peppers, diced
2 red bell peppers, diced
1 tablespoon dried chopped basil
4 cups red spaghetti sauce
1 lb Italian sausage, cooked and sliced thin
2 cups shredded mozzarella cheese, divided
1 cup parmesan cheese, grated, divided

Steps:

  • Cook the elbow macaroni according to package directions. Preheat oven to 350 degrees F.
  • Heat olive oil in large skillet. Add garlic, onion, peppers, and basil. Saute 3 minutes, then add the sauce and sliced Italian sausage. Simmer 5 minutes.
  • Spread 1 cup of the sauce mixture into the bottom of a 9x13 baking dish.
  • Layer 1/2 of the macaroni, 1/2 of the sauce mixture, 1 cup mozzarella and 1/2 cup Parmesan.
  • Repeat, and bake 25 minutes.
  • Let stand 10 minutes before serving.

4 red bell peppers, or more to taste
½ white onion
¼ cup shredded mozzarella cheese
1 tablespoon creamy Italian-style salad dressing
1 tablespoon banana peppers, chopped
1 tablespoon chopped fresh cilantro
1 teaspoon diced jalapeno pepper
1 dash lime juice
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Preheat an outdoor grill for high heat and lightly oil the grate. Grill sausages, bell peppers, and onion, turning occasionally until nicely charred, 10 to 15 minutes. Transfer sausages and vegetables to a baking dish.
  • Bake in the preheated oven until vegetables are tender, 10 to 15 minutes.
  • Combine mozzarella cheese, salad dressing, banana peppers, cilantro, jalapeno, lime juice, and the grilled onions in a bowl. Remove grilled bell pepper tops and slice into strips; add to mixture. Plate sausage and top with the pepper mixture. Season with salt and pepper.

This is my favorite dish to serve at a Pot Luck buffet. You can serve it in a bowl, over pasta or rice, or as a sandwich. I never have one spec of this recipe left over. It is hands down my most requested dish.

4 lbs italian sweet sausage
2 lbs hot Italian sausage
2 teaspoons olive oil
6 onions, large, sliced
1 teaspoon garlic, finely minced
6 bell peppers, red, orange and yellow, cored, seeded and sliced into strips
2 tablespoons rosemary, finely chopped
1 tablespoon oregano, fresh and finely chopped
1 teaspoon thyme
1/4 cup parsley, flat leaf, chopped
2 cups water (more or less)

Steps:

  • Heat the olive oil in a large cast iron skillet over medium low heat. Spread the oil in the pan.
  • Prick the sausage links to keep them from splitting open while cooking and to avoid getting burned by hot grease. If you like, you can use all sweet or any combination of sweet to hot you like(separate the links).
  • Brown the sausages very slowly in the skillet for 40 minutes or until browned all over and sticky.
  • If you can, slice them on the diagonal about 1/2 inch thick while they are still in the pan to preserve any liquids and tasty bits. If you can't slice in the pan just do it on a platter to reserve that goodness and re-introduce it to the pan - use a little water to rinse the juices back to the pan.
  • Add the garlic and sliced onions to the pan and cook until they are carmelized and soft. You may add water at this point to help loosen the fond, deglazing the pan. Once the pan is deglazed add the herbs to the pan. This may take another 20 minutes to cook.
  • Add the peppers and the rest of the water and cook for another 20 minutes. You don't want your peppers to lose all of their color so eyeball them.
  • Store in the fridge overnight. In the morning dump everything into crock pots to re-heat and cook on low for 2 - 4 hours. I sometimes reheat in a pan to make sure everything is up to temp before the party.
  • A lot of people think there are tomatoes in this dish but there are not.

Tips:

  • Choose high-quality Italian sausage for the best flavor. Look for sausage that is made with fresh, ground pork and seasoned with traditional Italian herbs and spices.
  • Use a variety of peppers for a more colorful and flavorful dish. Bell peppers, banana peppers, and hot peppers are all good choices.
  • Slice the peppers thinly so that they cook evenly. If the peppers are too thick, they will not cook through and will be crunchy.
  • Sauté the peppers in olive oil until they are softened and slightly browned. This will bring out their natural sweetness and flavor.
  • Add the Italian sausage to the pan and cook until it is browned on all sides. Break up the sausage into small pieces with a wooden spoon as it cooks.
  • Add the tomatoes, garlic, and oregano to the pan and cook for 10-15 minutes, or until the tomatoes have softened and the sauce has thickened.
  • Serve the Italian sausage and peppers over pasta, rice, or polenta. You can also serve it on a bun with your favorite toppings.
