1 small onion, chopped
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 14 1/2-ounce can tomatoes, drained, chopped

2 cups grated mozzarella

Steps:

  • Preheat oven to 350°F. Grease 9-inch glass baking dish. Melt butter in heavy large saucepan over medium-high heat. Add onion, bell pepper and basil and sauté until vegetables are tender, about 10 minutes. Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes. 2 filets haddock
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons butter, divided into quarters
1 garlic clove, minced
1/2 onion, small, sliced into thin rings
1/2 tomatoes, medium-sized, sliced thin
2 tablespoons seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • In a baking pan, place ½ tbs. butter in the space where each filet will be laid. Season filets on both sides with seasoning salt and pepper and lay atop each ½ tbs. butter.
