Time 20m

Number Of Ingredients 4

3 tbsp olive oil (extra virgin)
3 cloves of garlic
2 zucchini
italian grated cheese (Romano preferred)

Steps:

  • Start by slicing the zucchini into 1/4 inch rounds or even thinner, set aside
  • Heat the olive oil in a frying pan until medium, not super hot
  • Crush some garlic (don't mince), and add to the olive oil, stirring a bit and don't let it burn
  • When the garlic is fragrant, it's time to add the zucchini slices in
  • Spread the zucchini out and move them around periodically, they'll shrink a bit as water is released.
  • When done to your liking (I like mine slightly firm not mushy), remove from heat

Tips:

  • Choose firm, tender zucchini: Look for zucchini that are about 6-8 inches long and feel heavy for their size. Avoid zucchini that are bruised or have soft spots.
  • Slice the zucchini evenly: This will help them cook evenly. If you are using a mandoline, be sure to use the safety guard.
  • Don't overcrowd the pan: If you overcrowd the pan, the zucchini will steam instead of sautéing. Cook the zucchini in batches if necessary.
  • Use a well-seasoned pan: A well-seasoned pan will help prevent the zucchini from sticking. If you don't have a well-seasoned pan, you can grease it with a little olive oil before cooking.
  • Cook the zucchini over medium-high heat: This will help them brown and caramelize.
  • Stir the zucchini occasionally: This will help them cook evenly.
  • Season the zucchini to taste: You can season the zucchini with salt, pepper, garlic powder, onion powder, or other herbs and spices of your choice.
  • Serve the zucchini immediately: Zucchini is best served hot or warm. You can garnish it with fresh herbs, such as basil or parsley.

Conclusion:

Zucchini sauté is a quick, easy, and delicious side dish that can be enjoyed by people of all ages. It is a great way to use up fresh zucchini from your garden or farmers market. With just a few simple ingredients and a little bit of time, you can create a flavorful and healthy dish that is perfect for any occasion.
