COOL JADE SOUP

Cool Jade Soup image

The inspiration for test kitchen director Ruth Cousineau’s velvety chilled bean soup comes from Mediterranean-cooking authority Claudia Roden's recipe for bissara, an Egyptian bean-and-herb purée. The beans here are lima and green, simmered in chicken broth (you can use vegetable broth if you want to go vegetarian) and then puréed until silky. The herbs-parsley, cilantro, dill, and mint-are blended with olive oil so that you can finish the soup with a verdant drizzle, but don’t think of the herb oil as merely a garnish: Its bright flavor brings everything together.

During the Depression, the backyard garden was the source for most of our food. I can remember picking fresh vegetables and then enjoying the mouthwatering aroma as this soup simmered for hours. Tips:

  • Prep your vegetables: Chop, dice, or slice your vegetables before you start cooking to save time and ensure even cooking.
  • Use fresh, high-quality ingredients: The better the ingredients, the better the soup will taste. Look for fresh, ripe vegetables and flavorful herbs.
  • Don't overcrowd the pot: If you add too many vegetables to the pot, they won't cook evenly. Add them in batches if necessary.
  • Add flavor with herbs and spices: Fresh or dried herbs and spices can add a lot of flavor to the soup. Experiment with different combinations to find your favorites.
  • Simmer, don't boil: Bring the soup to a boil, then reduce the heat and simmer for at least 30 minutes. This will allow the flavors to develop and meld together.
  • Season to taste: Taste the soup before serving and adjust the seasonings as needed. Add more salt, pepper, or herbs if desired.
