JALAPENO POPPER MASHED POTATOES

Jalapeno Popper Mashed Potatoes image

I wanted to make mashed potatoes with a spicy kick, and since we had a lot of jalapenos and cream cheese needing to be used up, and because we love jalapeno poppers, I came up with this recipe. The fiance ate 3 servings and asked me to make this every time we have mashed potatoes! They were a little spicy but they were the best mashed potatoes I've ever eaten!

Time 1h40m

Yield 4

Number Of Ingredients 10

2 to 3 russet baking potatoes
1/4 cup 1/3-less-fat cream cheese (Neufchâtel), softened
1/4 cup butter, softened
1/4 cup low-fat (1 %) milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 slices bacon, crisply cooked, crumbled
1 jalapeño chile, roasted, seeded and finely chopped
1 cup shredded Cheddar cheese (4 oz)
1 jalapeño chile, cut in thin rings

Steps:

  • Heat oven to 400°F. Gently scrub potatoes but do not peel. Pierce potatoes several times with fork to allow steam to escape while potatoes bake.
  • Bake 1 hour or until tender when pierced with fork. Cool slightly.
  • When potatoes are cool enough to handle, cut each in half lengthwise. Scoop out inside of each half into medium bowl, leaving thin potato shell on each. Set shells aside. Mash potatoes with potato masher or electric mixer on low speed until no lumps remain. Add cream cheese, butter, 2 tablespoons of the milk, the salt and pepper; stir or beat until smooth and fluffy. If needed, add more milk. Stir in bacon, chopped chile and 1/2 cup of the cheese.
  • Fill potato shells with mashed potato mixture; place on ungreased sheet. Sprinkle remaining 1/2 cup cheese and arrange a few chile rings on top of each half.
  • Bake 20 minutes or until cheese is melted and potatoes are hot.

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 11

3 pounds russet potatoes (about 5 medium), cut into 1-inch pieces
1/2 teaspoon kosher salt, plus more for the boiling water
6 slices bacon
2 cups shredded Cheddar (about 8 ounces)
1 cup mayonnaise
1/4 cup chopped pickled jalapenos plus 2 tablespoons brine
3 tablespoons yellow mustard
1/2 teaspoon freshly ground black pepper
4 hard-boiled eggs, chopped
4 scallions, thinly sliced, plus more for topping
3 sweet gherkins, chopped (about 1/4 cup)

Steps:

  • Put the potatoes in a large pot and add enough water to cover them by an inch. Season with salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15 minutes.
  • Drain the potatoes and return them to the pot, then mash briefly with a potato masher, so that there is a mix of mashed and chunky potatoes.
  • Meanwhile, heat a nonstick skillet over a medium heat until hot, then add the bacon and cook, turning every so often, until crisp, about 8 minutes.
  • Drain the bacon on a paper towel-lined plate, then chop.
  • Tip the potatoes into a large bowl. Add the salt, cheese, mayonnaise, jalapenos and jalapeno brine, mustard, pepper, eggs, scallions and gherkins. Fold everything together.
  • Serve the potato salad warm, or cover and refrigerate until chilled, at least 1 hour or up to overnight.
  • Top with the bacon and more scallions before serving.

Tips:

  • Use a variety of potatoes. For the best mashed potatoes, use a combination of Yukon Gold and russet potatoes. Yukon Gold potatoes are creamy and smooth, while russet potatoes are starchy and fluffy. The combination of the two will give you mashed potatoes that are both creamy and fluffy.
  • Roast the potatoes before mashing them. Roasting the potatoes before mashing them will give them a more intense flavor. To roast the potatoes, simply toss them with olive oil and salt, and then roast them in a preheated oven at 425 degrees Fahrenheit for 30-40 minutes, or until they are tender.
  • Use a potato ricer to get smooth mashed potatoes. A potato ricer is the best tool for getting smooth mashed potatoes. It will help you to remove any lumps from the potatoes, and it will also help to aerate them, making them lighter and fluffier.
  • Add butter, milk, and cream to taste. The amount of butter, milk, and cream that you add to your mashed potatoes is a matter of personal preference. However, a good starting point is to add 1/4 cup of butter, 1/4 cup of milk, and 1/4 cup of cream for every pound of potatoes.
  • Season the mashed potatoes with salt, pepper, and garlic powder. Salt, pepper, and garlic powder are classic seasonings for mashed potatoes. However, you can also add other seasonings to taste, such as herbs, spices, or cheese.

Conclusion:

Jalapeno popper mashed potatoes are a delicious and easy-to-make dish that is perfect for any occasion. They are creamy, cheesy, and have just the right amount of spice. Whether you are serving them as a side dish or a main course, these mashed potatoes are sure to be a hit.
