JAMAICAN ME CRAZY CHILI
A Caribbean twist to a great winter-time dish! Sure to get the sinuses flowing!! This can be prepared without meat - just omit the steps with ground beef. Serve this dish by itself or over a bowl of basmati rice.

Steps:
- Place ground round in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- Coat a large Dutch oven with cooking spray, and place over medium-high heat. When pan is hot, cook the onion and garlic in olive oil until the onion is tender. Add the yellow pepper, and cook until tender. Season with cumin, paprika, chile powder, sugar, salt, and cloves. Stir in the stewed tomatoes, kidney beans, black beans, and cannellini beans. Pour in water to cover. Bring to a boil, then stir in the meat and tomato paste. Bring to a boil, and simmer for 30 minutes.
- Remove from heat, stir in the vinegar and serve hot topped with fresh cilantro.

Steps:
- Brown ground beef over medium high heat in a large, deep frying pan.
- Drain off fat and set aside.
- Coat a large dutch oven with cooking spray and place over medium high heat.
- When pan is hot add the olive oil and cook the onion and garlic until the onion is tender, then add the peppers and cook until tender.
- Season with the cumin, paprika, chili powder, sugar, salt and cloves.
- Stir in the canned diced tomatoes, and the drained cans of beans.
- Add water to cover all.
- Bring to a boil and then stir in the meat and tomato paste.
- Bring to a boil and then simmer 30 minutes.
- Remove from the heat and stir in the vinegar.
- May serve with chopped fresh cilantro as decorative topping.
GRILLED JAMAICAN JERK CHICKEN SALAD

- Make jerk rub: In a food processor combine jerk rub ingredients and process to a paste, stopping once or twice to scrape down sides of bowl with a rubber spatula. Cut several small slits in chicken and rub all over with jerk paste. Refrigerate, tightly covered, overnight. Preheat a barbecue grill and adjust heat to low. Grill chicken for about 40 minutes, turning once, until dark brown and crusty. Let cool and slice. Alternatively, bake chicken at 350 degrees F for 50 minutes, then broil 2 to 3 minutes until crisp.
- Make dressing: On work surface sprinkle coarse salt over garlic and chop to a fine paste. Whisk garlic paste with lime juice and a few drops of hot sauce, to taste. Whisk in vegetable oil until emulsified. Assemble salad: In a bowl combine salad ingredients with chicken. Pour dressing over, toss to coat and arrange on a lettuce leaf lined platter.
JAMAICAN ME CRAZY BEEF PATTIES
This dough is a very unique recipe I created from a Turkish recipe of mine called poagca (po-a cha) Adjust the filling to your likeness, and put as much as you like inside. I included a beef filling recipe but it's also great with chicken & potatoe curry mix too. You can also omit the tumeric from the dough, and use this recipe and stuff with feta, scallions, and parsley YUM!

Steps:
- For the filling.
- In a large pan cook beef and onions till brown, add spices, breadcrumbs and water.
- Continue to cook for 3-5 minutes, the breadcrumbs will absorb the water( you may need to add more water) Adjust to your likeness.
- Let cool until dough is ready.
- For the starter-mix the yeast, flour and water (first 3 ingrediants)in a medium size bowl, cover with plastic wrap and let rest in a warm place for 1 hour.
- For the dough.
- sift the flour, tumeric and salt in a large bowl, with a pastry blender add the butter or crisco till it become like small pea size.
- now add the eggs to the starter and wisk them together.
- Add the yeast and egg mixture to the flour.
- Stir until it froms a ball and then knead for a few minutes.At this stage the dough doesnt look the nicest but it will turn out!
- Divide the dough in 20 peices.Roll into balls and place on a tray, let rest for 30 minutes ( or you can refridgerate till later use).
- Pre-heat oven to 350 degrees.
- Line a few baking trays with parchment paper.
- on a lightly floured surface roll out the balls of dough in a oval shape about 8-10 in long.
- Add filling to one half fold over and seal edges with a fork, continue until you have 8 patties on each cookie sheet.
- Bake at 350 degrees for 20-25 minutes or until edges are golden.
