Leftovers make a great "Italian" sloppy joe on garlic bread. I make two batches and freeze the sauce for a busy night.

Steps:

  • Combine all ingredients (except scoops). Refrigerate before serving. Serve with scoops. ** for large group, make 3x's

Tips:

  • Choose ripe, flavorful tomatoes for the best sauce. Look for tomatoes that are deep red and have a slight give when pressed.
  • If you don't have fresh tomatoes, you can use canned tomatoes. Be sure to drain the tomatoes and rinse them before using.
  • Use a heavy-bottomed pot to make your sauce. This will help to prevent the sauce from burning.
  • Don't overcrowd the pot with tomatoes. If you do, the sauce will be too watery.
  • Simmer the sauce for at least 30 minutes, or until it has thickened. This will help to develop the flavor of the sauce.
  • Season the sauce to taste with salt, pepper, and other herbs and spices.
  • Serve the sauce over pasta, meat, or vegetables.
