2 cups fresh corn (about 3 to 5 ears)
1/3 cup onion, finely chopped
3 eggs
1 tablespoon sugar
1 teaspoon salt or to taste
2 cups milk
1/8 teaspoon nutmeg, freshly grated

  • Adjust the oven rack to the middle shelf and preheat the oven to 350 degrees.
  • Butter a one-and-a-half-quart ovenproof casserole with about one tablespoon of butter and set aside.
  • Husk the corn and remove all the silk. With a sharp knife, remove the kernels from the cob, slicing from the top of the ear downward and not too close to the cob. 4 tablespoons unsalted butter
3/4 cup finely chopped yellow onion
2 teaspoons finely minced garlic
4 cups white corn
3 teaspoons fresh thyme leaves, finely chopped
1 teaspoon sea salt
1/4 cup flour
4 extra large eggs
2 cups heavy cream
1 tablespoon granulated sugar
1/2 teaspoon fresh ground black pepper
5 slices thick smoked bacon, cooked, drained, and crumbled
3 tablespoons fresh green onions, thinly sliced

Steps:

  • Thaw the corn (preferably in the refrigerator overnight), rinse and let drain in a colander.
  • Chop onion, garlic, and fresh thyme.
  • Cook the bacon and drain on paper towels to remove as much grease as possible -crumble.
